    Two things come to mind;
    "There is more art in a good soup than there is in a bad painting."

    Rustics by and large have little time for repetitive artisan pursuits as they work the land, even when breadmaking.
    Emulating a rustic practice takes an artisan, I'd guess.

    Good cakes are just breads with a tweak in them, made by crafty artisan bakers.

    The 1970s saw the start of those ideas, they're only now coming into flower.
    There's been a second generation of the 'hippy' culture in the last 10 years pursuing along with more mainstream folk, most of the hippy dream of organic and political cohesion, including advertising and the media, so yes, the younger generation are onto a better idea of the future than we had in the 1960s.

    But good organic home made bread?

    The best.

    I live quite near a MaxValue which has a Yam-something Japanese bakery outlet so at present I have no need to bake my own.

    ^If you actually read the OP you would see that I referenced a book that is called Flour, Water, Salt, Yeast - the fundementals of artisan bread and pizza making. I also referenced a website that is entitled 'making overnight artisan bread at home'. I am not inflating my efforts at all as you seem to be inferring. You seem to be just trolling to bring attention to yourself.
