After a recent trip back to Blighty i got the taste for oatcakes again, and so decided to have a go at cooking my own.
Using a recipe passed down over hundreds of years (well, ripped off the internet), i got a flat gridle from Macro (advertised as a crepe maker) and boshed a half dozen up for breakfast.
Mix milk/water, yeast and sugar and set aside in a warm place for a few minutes to froth.
Add oatmeal, flour, and salt to a bowl and mix.
Add milk mixture and oil and whisk.
Leave to rise in warm place for an hour.
Lightly whisk - adding more warm water/milk.
Cook as for pancakes - ladle mix into pan wiped with cooking oil and fry on high heat until top "dries", flip and cook otherside.
Once cooked, cool on a cake rack.
These oatcakes are much nicer when they have cooled, ideally in the fridge for a few hours.
To serve simply warm up, add filling and roll.
My filling in these was cheese and bacon, with a side dish of brown sauce (HP).
