I decided on a roast beef dinner tonight so sent I the wifey off to the shops for some beef and I got the veg ready.
Ingredients
1 Kg of Imported Australian beef.
6 large potatoes.
3 large carrots.
1 head of broccoli.
1/4 cup o whiskey.
4 large cloves of garlic.
10 small red shallots.
1 spoon of chili flakes.
1 tablespoon of Lea and Perrins Worcestershire sauce.
Extra virgin olive oil.
Crushed black pepper-corns.
Salt.
Wash the pops give the skin a good scrub with a brush. Skin the carrots and chop the broccoli into florets. I also scored the pops and carrots to help with cooking and flavour absorption.
Place the potatoes and carrots into a large pot and start them on a high heat until the water boils. Turn the heat down to medium and let them simmer for about ten minutes depending on the quantity.
The broccoli can sit and wait until about twenty minutes before serving.
Get the garlic, shallots, chili flakes, pepper and salt into a bowl. Add the olive oil and Whiskey and mix thoroughly. The veg should be ready by now. Get the potatoes and carrots drained. Chuck your pops into a colander and give them a bit of a bash to loosen up the skins so they'll be crispy when finished. Get your veg on a baking tray and cover with the mix.
Bung the veg in the oven on gas mark 8.
So the beef arrived. Not too happy with it. There was a big lump of fat running through the top-side.
Never mind no point complaining to the Mrs as it would've ended poorly for me.
Get some more crushed pepper corns and salt and mix it with some olive until you have a rubbing paste. Slather it all over the beef and get on the pan to sear it on all sides.
When it's finished searing, wrap it up in aluminium foil. Turn the oven down to gas mark six and put it in. I make a neck in the foil so it can be snipped with a scissors and por out the wonderful juicy flavours.
The cooking time for the veg in the oven should be an hour. The meat will be medium rare at about 40-50 minutes. If you want medium about 1 hour and more than that you're a fucking heathen that shouldn't be eating roast beef.
It's important to let the beef sit for approx 15-20 minutes as it will still be cooking. It retains it's heat from the oven so the cooking times reflect this. Pop it on a plate a cover with a towel. You can cook your broccoli and make your gravy from the leavings of the roasted veg now.
A nice meal but hard work in Thailand. I could have used with a beach towel to mop the sweat off of me.
