    Necron99"s Pizzeria

    If you've made lots of pizza before this will bore you, go check out Teakdoors' new bar in the lounge instead. (TeakDoor opens new lounge bar in Mai Arse)

    I had my doubts about the dinky little 1000 baht electric over in the bush house, wasn't at all sure how this would turn out.

    What you will need.

    Flour
    Instant yeast
    Pasta sauce
    Salt
    Honey or sugar
    Olive oil
    Toppings
    Cheese
    Tomato
    Pepperoni
    Fresh Chili


    Step 1

    Mix a cup of warm water, 2 teaspoons of yeast,, a tablespoon of honey and half a cup of flour. stir well and leave for 20 min.

    When you come back it should look like this.




    Step 2.

    Mix 2.5 cups of flour, 2 teaspoons of salt, two tablespoons of olive oil in a bowl.
    Slowly add the yeast while stirring until it's all stuck to the spoon. Add a little flour of it seems too wet.




    Step 3.

    Flour your board and kneed for 10 min.




    Step 4.

    Put your soon to be pizza in a bowl and lightly coat with oil. Leave it covered somewhere warm for 2 hours. When you come back it should have doubled in size.



    Punch it down, cut into 2 sections,, each in their own plastic bag and into the fridge.




    Step 5.

    Come back tomorrow.


















































    Step 6.

    Take your dough and stretch it out to fit your pan.






    Step 7.

    Oil your tray and lightly oil the top of the dough.
    Add sauce and cheese.




    Toppings....

    Half onion and pepperoni
    Half tomato, onion and chili
    Good crack of black pepper.






    Step 8.

    Into the dinky over at 230c for 10 minutes.



    tick..tick...tick..tick





    Result?




    Pro's cheap an easy food.
    Con? Crust was a little thick and try for the life of me I cant replicate that NY Pizza soft flexible crust.

    we use a breadmaker to make the dough.... takes about an hour

    and we've got one of those pizza stone to stick it in the oven on.... which means you can make it round



    looks like that when you buy it, but gets a lovely dark brown colour once it's been seasoned

    we used to try and make pizzas in those little ovens in thailand

    never had much luck

    the base always came out a bit biscuity

    maybe we were just shit at making dough

    Now the competition is getting serious. I have made pizza on here. 5555 Must be almost 3 years since I have put any pizza photos up and we make it about every other month and freeze a couple. Mine were an "attempted" round pizza though.

    ^^ Yeah, that one was a little dry and bread like. Probably a minute or so overdone as well.
    Even though the recipe is supposed to make a NY style soft crust.
    maybe the ovens get too dry, might try putting a bowl of water in there next time.

    Still better than pizzahut.

    like I said, we never had much luck

    I guess it's to do with the size or temp of the ovens

    Would that work? I'm not sure, because that's how you make bread crusty. Might just make pizza dough (given the thinness) harder

    I don't know, because I always make bread and pizza dough with instant yeast, which only involves one kneading and proving, but after watching countless Great British Bake Offs I'm wondering if your dough was over proved. Your method does seem to involve a few different provings. Just a thought.

    More akin to alchemy than cooking.

    Yeast can only rise so many times between proofing and baking.

    Green Swan (green Flour) is your best bet.

    Pizza works best with minimal cooking time and maximum heat.

    Looks fvcking arroy either way

    I use half bread flour and half all purpose. (Tip from an Italian pizza maker in Cha-am)

    That recipe is pants whichever way you look at it. It'd never make a NY style pizza as you can see from looking at the ingredients. Honey indeed!

    Try this, or a variation of it. We used something similar a few years back before we perfected the style I like (looks similar to yours from the photos, but is more bread-like than biscuity).

    Just go to a tile shop an have them cut you a granite or terra cotta tile to size.

    it's more like terracotta/ceramic than granite... it needs to be porous to absorb moisture
