I had a supplier ask me for the essential ingredients for Thai curry - he needs to advise a potential wedding organiser.

I ask the question, what are the only ingredients for a Thai green curry.

My wife told me

Green curry paste
coconut milk
small eggplant
chicken
fish sauce and sugar seasoning
and sliced red chilli to garnish

To make a proper green curry you have to make the paste yourself, bit like beans on toast, you can open a can of baked beans or you can bake your own, so expect a life of living on tinned and microwaved dinners when she gets over to the UK

The imported curry paste is fine.
For green curry I add thai holy basil near the end and normal basil at the end of cooking, tastes fantastic.
