    Ceasar Salad Dressing Recipe

    How to make Ceasar Salad Dressing

    Ingredients:
    Serves/Makes:4

    1 2 oz (56 grm). tin anchovies, drain on paper towels, use half in dressing and reserve half for salad
    1 large lemon, juiced
    4 large cloves garlic
    1/2 tsp (2 ml) Dijon mustard
    2 dashes Worchestershire sauce
    1 splash red wine vinegar
    1 fresh egg, raw or coddled
    1 cup (225 ml) light, extra virgin olive oil
    fresh-ground black pepper, to taste

    Instructions:

    In a blender, combine all ingredients except olive oil.
    Blend until smooth, but not too long.
    With blender running, add olive oil in a gradual stream.
    Continue blending until oil is completely incorporated.
    Best if chilled before use.

    Comments

    This is a theme and variation on the Fairmont Hotel "Squire Room" recipe. Everyone who has tried it has raved about it! Romaine must be well-chilled and dry. All ingredients may be adjusted to suite taste. I usually use 1/2 the oil the recipe calls for to reduce fat. Remainder of anchovies may be rough chopped or left whole to serve at table. I always use shredded parmesean and homemade croutons for this salad. Serve in well-chilled bowls or plates.




    Another Caesar Salad Dressing Recipe:

    1 fresh, organic egg
    2 tbsp Parmesan Cheese
    2 garlic cloves
    4 tbsp Mozzarella Cheese, shredded
    1/8 c Red Wine Vinegar
    2/3 c Olive Oil
    Blend all ingredients with 1/3 c olive oil in a blender. Blend one more time adding 1/3 c more olive oil. Refrigerate 2 hours.

    Lemon Marinade Recipe
    2 T olive oil
    1/2 small onion, finely minced
    1 clove garlic, minced

    freshly ground black pepper, to taste
    grated zest of one lemon
    1/4 cup fresh lemon juice
    Mix all ingredients, use immediately.

    How to Make Applesauce

    Peel, core and quarter cooking apples, grany smith, pippin, etc, as many as you want to deal with and put in large heavy lidded pot, add just a bit of water to get the juices going and maybe the juice of one lemon, cover and stew on very low heat, watch to prevent burning, add water as needed, just 1/4 cup at a time.
    When apples have cooked down, stir to break up, use blender if you want it
    smoother, add sugar and cinnamon to taste, brown sugar is also ok.

    Homemade Tomato Sauce

    Tomato Sauce

    Ingredients: Tomatoes, ham, onions, basil, salt, oil, garlic, spices.

    Broil three tomatoes, skin them and mix them with a tablespoonful of chopped ham, half an onion, salt, a dessert-spoonful of oil, a little pounded spice and basil. Then boil and pass through a sieve. Whilst the sauce is boiling, put in a clove of garlic with a cut, but remove it before you pass the sauce through the sieve.

    Tomato Sauce Piquante

    Ingredients: Ham, butter, onion, carrot, celery, bay leaf, thyme, cloves, peppercorns, vinegar, Chablis, stock, tomatoes, Velute or Espagnole sauce, castor sugar, lemon.

    Cut up an ounce of ham, half an onion, half a carrot, half a stick of celery very fine, and fry them in butter together with a bay leaf, a sprig of thyme, one clove and four peppercorns. Over this pour a third of a cup of vinegar, and when the liquid is all absorbed, add half a glass of Chablis and a cup of stock. Then add six tomatoes cut up and strained of all their liquid. Cook this in a covered stewpan and pass it through a sieve, but see that none of the bay leaf or thyme goes through. Mix this sauce with an equal quantity of Velute (No. 2) or Espagnole sauce, (No. 1), let it boil and pass through a sieve again and at the last add a teaspoonful of castor sugar, the juice of half a lemon, and an ounce of fresh butter. (Another tomato sauce may be made like this, but use stock instead of vinegar and leave out the lemon juice and sugar.)

    1-1/2 C sugar
    1 navel orange
    1/2 t grated ginger
    4 C cranberries
    1/2 C (2 oz.) toasted pecans
    Grate the orange peel and add to a pot with the sugar and ginger.
    Add the juice from the orange into the pot and simmer over medium heat until the sugar is dissolved.
    Add cranberries and cook until they pop - about 5 minutes.
    Add pecans and cool sauce.
