That looks like an onion cake with a little egg and cheese!

^ It is a bit heavy on the green onions. (Burp)

Though I liked the idea of a runny yellow included in an omelet. I’ll be giving that a go.

...I'd lightly saute the green onions with a minced clove of garlic and a chopped red chili or two first, then add the egg mixture...

For me, an egg on my eggs is a non-starter.
