    Wine making

    I used to make my own wine years ago and wouldn't mind having another go in Thailand. Has anyone tried; can you get the equipment easily or will I have to bring it with me?

    I am thinking that Pineapple or Mango might be a good start assuming I can get all the kit.

    That sounds interesting, pineapple or mango wine!
    I made a batch of merlot from a kit once, it came out drinkable but nothing spectacular.
    It was much more difficult to make wine than ale I thought. I've made a lot of very good ale.

    The biggest obstacle to brewing here I think would be maintaining the proper temperatures for fermentation which IME is key to good brewing; probably true for wine making as well.
    You would need to have a constantly air conditioned area.

    I've made beer a couple of times and they were ok - did a home made cider once but it went rank

    I not a great fan of wine as it goes (though I do like brandy)

    home made wine - now that just sounds dodgy to me

    Nowt much wrong with home made wine, and if you have access to cheap or your own fruit ,it cost,s virtual peanuts to make

    I made wine from cashew apples a couple of years ago, the only 'imported' ingredient being apple cider yeast from the UK. It seemed like a good idea- even the Thai waste cashew apples, they are just left to rot on the ground.

    Apart from that, just two 20 litre water bottles, some big balloons, a big pot for boiling, local honey, some muslin cloth for filtering, and a load of elbow grease- pressing cashew apples is messy work. The resulting brew tasted like dog piss, but got the job done- and mixed 50/50 with Schweppes manao soda, not too bad.

    If I can get my hands on a decent Press for juicing, I'll certainly do it again.

    I would think the easiest way for beginners to have a tilt at home made wine making is with the Carton non preservative fruit juice we see in every Supermarket or large shop , all you really need is the juice ,Sugar and yeast ,if you cannot get Wine makers yeast Bakers yeast will suffice almost as well, if you Google up "home made wine making from fruit Juice" all the info is there , no need for a water air trap , just put a small plastic bag over the demi john secured with a could of rubber bands ,it lets the gas out but no air in.

    It makes for a weak brew though- better to get your hands on 'proper' alcohol yeast if you can. In prison, the canny jailbirds ferment their own piss with nothing more than a yeast culture, sugar, water and using fire extinguishers as the brewing vats. Lets hope there isn't a fire.

    No need for a press Sabang just peel the skin off add hot sugared water and mash em up, do not add the yeast until the mix has cooled down otherwise it will kill the yeast ,loads of info on Google , forget all the fancy ingredients ,Sugar,yeast ,and the fruit is all you really need .

    I am taking it from one who knows (me) for about the last 30 years I have made hundreds if not Thousands of gallons of really good wine from many different fruits both in the UK and here in Thailand and never used a press , Carrot wine is really good gear , ever tried pressing a carrot? If you go one to Google theirs Dozens of recipes on the Subject

    No- and how do you extract juice from a carrot without a press? Simmering at a guess, but I'm curious to know (or are you by any chance related to arnie Schwarzenegger?).

    I used to grate mine , you can also use a old hand cranked meat mincer with is far quicker too, here is just one of the many recipes on carrot wine making

    Righto- grated and boiled. Sounds OK, might just get a batch of 'simmered piss' on the go, but waiting for yeast from my next overseas visitor. If I make cashew apple hooch again sans' press, I'll definitely go the simmering route.

    What I used to do with the fruit pith to get every bit of juice out after fermentation was put it in a strong muslin bag then screw it like you would with an item of laundry into a large clean plastic basin , better still if theres two of you cos you can do it with two two foot wood lattes the torque on it is quite strong and squeezes out ever last drop of juice as well as filtering it before bottling , you will always get some residue after the wine has cleared but you can siphon the wine out into a clean bottle ,wash the dirty bottles and start a fresh .

    Yeah there's quite a lot up here make there own Rice Sato with sticky rice ,the stuff I have "sampled" up here in Buriram is pretty lethal gear and kinda "creeps up" on you if you know what I mean!

    I've got some pineapple wine (my first ever attempt at brewing) sitting in the fridge right now.

    I made it by blending a couple of pineapples and boiling the pulp up with sugar. I had to use baker's yeast because I couldn't find brewer's.

    I made the air trap by drilling a hole into the lids of the plastic water bottles I was using for fermentation and then glueing some plastic fish tank tubing to them. Then I used a little plastic container with water in it and a few holes drilled in the lid to bubble the CO2 out.

    Since it was my first go I didn't want to waste too much on pineapples as I was pretty sure it was going to fail so I only made about 2.5L. After fermentation stopped and I syphoned off the liquid leaving the pulp and dead yeast I had about 1.5L left.

    Naturally it was a pretty noxious brew at that time, very yeasty, but it has been resting in the back of the fridge for about 4 months and it is actually clarifying itself quite well. I had a little taste a couple of weeks ago and it's actually not too bad now considering what a jerry rigged set-up I had and the fact that I have zero experience.

    Fun learning experience.

    QC All you need for an air trap is a small plastic bag and a couple of rubber bands , just put the plastic bag of the bottle top and put the rubber bands over it , not too tight just enough to let the gas out but no air in ,wine making is real fun once you get into it and you will learn more as you go along , heres the red neck way , I tried this over 30 years ago with quite good results

    I did a lot of reading before having a go, and you are of course correct. The other suggestion was a balloon with a pin-prick in it as the slightly higher pressure of the CO2 bubbling up would stop oxygen getting in but me being, well, me, I decided to go all Heath Robinson and Professor Branestawm about it!
