Any recommendations for a nice 'village'. Also which ones not to go for.

fair enough, its not the cheap option it once was either.
there are many scam developers in the hua hin area, we live in hua hin (17 years, in a condo, although we have been away due to covid for 18 months now) and regularly hear from house owners about lengthy and intractable problems relating to access, poor construction, lack of meaningful security, legal issues and chanotes, electricity, water and service contracts, problems involving the management and committees, including on one of the developments you mentioned.
noisy neighbours, the general air of abandonment, deterioration and emptiness felt on many moo baans without a decent proportion of occupied properties, air bnb houses rented to weekend party groups, problems with the tessabaan etc. etc. etc.
there have been and i think there are still are some very disreputable developers operating there, they are well connected with local "big cheeses" who are often unable or unwilling to right wrongs, and seemingly simple disputes can quickly become intractably complicated issues that need lawyers and courts to untangle.
do your research thoroughly, and then do it again.
condo living is not perfect, but hearing about the seemingly never ending heartache, expense and frustration experienced by houses owned in a thai name made us thank our lucky stars that we bought into a very well run condo block.
the hua hin forum ( huahxnforum,com) is useless for property information, they delete any posts mentioning developer problems.
it is a decent place to live though, pretty surrounding countryside, nearby cha am and the coastal strip north to phetchaburi (a foreigner free town stuck, thankfully, in the 1950's), good restaurants, shops, hospitals, etc, but the pace of development there over the past few years is frightening as is the increase in traffic and congestion around the town centre and to the south.

The projects from the Orchid Group (like the new Mali Prestige) have a good reputation, too. We are living south of Hua Hin, in Khao Tao. Our project is sold out. There the Manora and the Sivana project nearby. Khao Tao is good developed and not so far away from the center of Hua Hin as it may look. It takes about 10 minutes by car to be at Blúport. My son goes to the BYS Yamsaard school which takes about 15 minutes from Khao Tao.
Khao Tao is nice. Definitely worth driving to visit the villages. There was a lovely one up on a hill but there wasn't a shop within 3km let alone a restaurant or bar.
you'd be driving everywhere as even the tuk tuks weren't keen on travelling.
There are may restaurants in the area, especially around the water reservoir. There are 7-11, Family Mart and Lotus's Express at the main road (around Soi 101).

But you need a car for driving to Hua Hin centre.
If buying, condo is so much better than a house.
Rent before you buy anything in HH.
I have no intention of buying property in Thailand. Lady Cows house in Bangkok is more than adequate for my needs. We may build a small holiday house up around nakhon sawan near the river where I can go for some quiet fishing and hopefully catch nothing, but that will be it. The escalating property values in Australia are more of a concern at the moment. My property has increased in value by $30K in the last month and it is more concerning how my children will ever get their own property.

I am Thai, so no hassles(hopefully) with foreigner stuff.
I see one in Orchid Paradise that seems nice.
Looking at Sivana too, they say they can build me a 4 bedroomed place.
Also near there is Staurt Park. I hear some have issues with structure though, would need a surveyor first.
Is there an EP at that school? Are you happy with it?
