dunno about growing it bit I buy nice beetroot in Makro and make my own, excellent!

just boil them slice them and cover with vinegar --malt is best but any will do
Thats right Donald, I find malt almost obligatory as the thai stuff is too strong

Beetroot are excellent roasted too.
In a roasting tray along with garlic,carrots,onions, in fact any root veg to hand, season,. I like to add fresh tyme (if available) serve up with a pork chop that has been roasted in with the veg and creme fraiche on the side.

I use fresh beetroot in juice every day, very good for you in any form.
Pickled I prefer Heinz, tho a tad sweet.
