    Falang food in Sisaket Province

    Been trying to find certain foods since I've arrived. I found real mozzarella cheese and lasagna noodles at Big C but no Ricotta yet (might have to use cottage cheese) Also, have had a hard time finding pretzels, especially the large sourdough kind, Utz,are my favorites. I found a small bag (do they have big bags of chips either anywhere?) when I was in BKK a few months ago but no big pretzels, only the tiny ones. The cereal selection here is limited to corn flakes,rice flakes,bran flakes,shredded wheat, and kids cereal, which I don't eat.Eventually I think I'll have to send to a company for a case. When I was in the states I ate Barbara's brand and a few other health food varieties.I've been to Big C, Tesco and Makro. Anyone have any suggestions or places they know of that might carry more? A trip to BKK isn't out of the question to load up someday.

    Yes, Texas, and New Jersey originally. I love and always have loved Thai food, but there aren't any healthy snacks around here like pretzels, and I like to cook and we'll have an American-Thai kitchen so I'll want to bake things like lasagna,chicken,fish etc.

    yeah - uh - really?

    Pretzels a healthy snack? You might need to convince me of that. The salt alone puts them into the "not healthy" category I would have thought...

    Not all pretzels are healthy. Some have more salt,oil and sugar than others. I've been eating healthy all of my life and pretzels are one of the few snacks that pass the grade. I know bugs might be pure protein but they aren't on my list of food. I do and always have read labels and consider salt in excess one of the enemies, along with refined sugar. I won't go into the other specifics, but my blood pressure has been 115 over 54,resting pulse 58 and cholesterol under 100 all of my life. Some people can eat anything,smoke cigars,drink whiskey and live to 100, I know, and to me, that is genetic crapola lol I consider pretzels a "relatively" healthy snack because they do offer some nutritional value, but I don't eat them all the time. But when I do, I like the big sourdough ones

    Between Makro and Big C you can find most things in Sisaket. Supplement with an occasional trip to Villa in Bangkok for hard to find items. Specialty items you can get online https://www.passiondelivery.com/

    Not quite the same but certainly a substitute for texture. I've made a couple of batches of cottage cheese simply by souring milk. Not a bad result and very easy. Used an old pair of my wife's panty hose for draining.
    Just an aside, Big C does have parmesan, I'm sure you'll want that too.
    As for healthy cereals, Big C has several choices of muesli. You can do it the traditional way and soak it overnight in milk, or the yuppie way and just pour milk over it like with cornflakes every morning. Both methods have their pluses.

    I've never used cottage cheese for lasagna but the ex swore by it.I'll definitely need parmesan yes, I knew Big C had that. Next time I'm in BKK I'll look up Villa. Last time I was there we stopped by a small store off Silom Road inside a small mall of food places that had quite a lot of falang food. More varieties of spaghetti sauce were some I saw.I'll check out that link Humbert, thanks. Wish I would eat muesli,but with the quantity I'd eat, it would run into the hundreds of calories. I like flakes and shredded wheat but that seems to all of what I've seen so far. I was happy to find Equal, as it's the only sugar substitute I've seen. I usually use Splenda, but the box I brought from th states is about gone.

    Make a bechamel sauce. It's far better than ricotta or cottage cheese.

You can find good bread, if it's oat, rice or chickpea floue for three, although taste isn't like white or wheat. I love pumpernickel and rye myself. I intend to make my family here French toast, and all I've ever used was white bread for that. Just another carb. If you keep your crappy carbs low and good carbs higher, you won't have a problem. Humbert I've never had béchamel sauce but looked it up and came back to edit.Sounds good. The mother of all sauces gets my interest.Definitely on the lasagna agenda now. Usually used jar Mom's,Prego,Bertolli,and others, although even though I'm not Italian, I was taught by Italian relatives how to make real sauce, or gravy as some call it. Just takes half a day to make

    ^^^Villa has a number of subs, stevia for one.

    can find pure coconut, monk and other fruit sugars in some Thai shops.

    Bread is delish, Nam. True dat be. So it could be psychologically healthy...

    Cottage cheese lasagna. Made by my wife here in the US.* I prefer it to straight ricotta lasagna.



    Don't knock it till you've tried it.

    *leftovers nuked in the microwave to warm up...hence the messy plate.


    edit: I just asked the chef and she said when she uses cottage cheese, she uses all cottage cheese. When she uses ricotta, she uses all ricotta. Can't really explain why I prefer the cottage cheese version...

    Looks good to me. I'll probably end up using cottage or béchamel anyway, due to the lack of ricotta, so I'll find out firsthand. When we get the new stove,I'll track down the necessities and let you know how it turned out. My wife already loves pasta,so I know this will be a treat.

    I started using bechamel for exactly the same reason. I found that the best lasagne recipes on the net used that method. I make my own Italian sausage by making a ground spice blend using dried fennel, dried chili pepper, salt, garlic powder and paprika. Makes a wonderful lasagne layered with home made tomato sauce, mozzarella, parmesan, and bechamel. Never went back to using ricotta. You have to adapt and make do when living ban nork.
