    Blackgang used to make his own sausages. He'd order the spices from the UK. I brought them over for him once. May be he has a thread on making sausages?

    We had "sausage fest" at the fish crib on Saturday. A group participation of Loa ladies I have known for years. They were used to hand jobs but out of the goodness of my heart I let the gf have them over so I could show them how to turn my crank. We did much sausage stuffing late into the night.

    If and or when I get time I may make a thead on how to stuff the sausage. Lao style with western devices of course. Much grinding involved.

    I'll try to get the ingredients list from the little woman. We use pigs intestine as the casing. It should make for a nice pic thread as I sort of took pics as we were getting into it. May be a bit too much for some folks as it does get a bit messy.

    Though the French have thier own take,

    Some local products are amazing like the Roquefort Sanglier sausage. Kinda expensive but wow!

    It's hunting season in France and thereabouts nowadays. Or maybe a bit later on, in October.

    And they make good sausages from the Sanglier - wild Boar. Also the stews are to die for.

    Autumn,Fall is starting - huntin' Season. And grape picking...

    I got 6 Brazil inspired pork sausages. Based on Brazil's national dish, Feijoada, these sausages consist of seasoned British pork , black beans,chorizo and beef stock.
