Blackgang used to make his own sausages. He'd order the spices from the UK. I brought them over for him once. May be he has a thread on making sausages?
Google Blackgang sausages at your own risk...
We had "sausage fest" at the fish crib on Saturday. A group participation of Loa ladies I have known for years. They were used to hand jobs but out of the goodness of my heart I let the gf have them over so I could show them how to turn my crank. We did much sausage stuffing late into the night.
If and or when I get time I may make a thead on how to stuff the sausage. Lao style with western devices of course. Much grinding involved.
I'll try to get the ingredients list from the little woman. We use pigs intestine as the casing. It should make for a nice pic thread as I sort of took pics as we were getting into it. May be a bit too much for some folks as it does get a bit messy.
The German sausages are the model for the rest of the world.

Though the French have thier own take,
Some local products are amazing like the Roquefort Sanglier sausage. Kinda expensive but wow!
Some kind of delicious!
It's hunting season in France and thereabouts nowadays. Or maybe a bit later on, in October.
And they make good sausages from the Sanglier - wild Boar. Also the stews are to die for.
Autumn,Fall is starting - huntin' Season. And grape picking...
Same here in the Republic of Western Canada...
I got 6 Brazil inspired pork sausages. Based on Brazil's national dish, Feijoada, these sausages consist of seasoned British pork , black beans, chorizo and beef stock.
Tesco finest £ 1.65
Sai oua - magnificent. The chili, fresh ginger and raw cabbage sides are a must, and some khao neow is also good. And a beer...
I think poor old Fluke started this thread as dig at a certain sausage smuggler.
Well, he failed there!!
