    Did mention it earlier Nostradamus, but why you only mention Scottish chippies I have no idea - any chippy worth his salt will use mucky fat, although the bloody veggies and health nuts are trying to drive them out. Even Harry Ramsdens has caved in, the tossers.

    For the spuds, try and find something that's akin to Maris Piper or King Edwards. Can you grow these in Thailand? I mean how hard is it to grow spuds?

    I suppose beef dripping is something similar to the suet if not the same. I had looked that up in a dictionary.

    Growing spuds is easy if you have the right conditions. Fat clay soil is not good for them, too heavy and they either dry or rot in the humidity.
    A light sandy soil with humus that drains well plus enough humidity would be fine.

    Thick or thin, they are a greasy mess to make at home IMO. I agree, the thin ones are crap but the thick cut ones are hard to find in the supermarkets.

    The thickest ones in Kamphaengphet Makro are 12mm are they are too thin for me so I just don't bother. Whenever I go to Patts I buy loads of spuds at the wet market in Naklua and bring em back..

    I have found some reasonable frozen chips at last, they cost about 100baht per kilo but are not those thin ones, fry for 4 to 5 minutes and they even come out the proper color, they are called Simplot and seem to be made in the Netherlands of all places.
