Hopefully this will be the most comprehensive list on schools and courses for learning the art of cooking Thai food in Thailand.
Most of these courses include a morning trip to the local Thai market to buy food that you will be cooking, some include daily transportation to and from your hotel for free and some don't.
All of these courses expect you to eat what you and your fellow learning chefs have cooked, so if you see me at one of these courses your best bet is to demand a refund and don't die of food poisoning.

Bangkok, cooking courses in and around Bangkok.

    Baipai Thai cooking school
The school is set in a wooden Thai style house and is Accredited by the Ministry of Education of Thailand, courses start from 1,400baht.

Taken from their website to give you an idea of prices, many other courses available here.

As you can see it is quite expensive but it is held in a 100 year old mansion.

2,000baht and "May" will come to your house with the ingredients and teach you how to cook 3 dishes of your choice from her menu.

Great list! I'll have to check out one of those schools in Chiang Mai when I get out there.

    ***

Marriot Resort in Pattaya also has a course. It was 1500 baht, maximum class size 4. Make reservations at least one day in advance. The course is taught at the outdoor kitchen near the pool.

Usually 3 courses per couple. There were 3 of us so we had six different dishes, each prepared twice (each person prepared 4 dishes).

The class was fun, food was tasty, probably turned out to be 3x more than we could eat, unfortunately. Hated to waste the food.

    cheers

Never mind Thai food, my missus does that, and there isn't a shortage of places to buy it.

I've been learning how to bake bread with a rice-cooker.
    Now that's a challenge!

There is nothing difficut about making Thai food, I cook most of ours at home, smply because I enjoy cooking and the wife has a limited repertoire, I like to get a bit more adventurous.
Last time I was back in OZ acquaintance opened a new restaurant, the food was a shocker so spent a couple of weeks showing how.
Sounds arrogant I know, but thats how it was, the "cooks" were Thai students part timing, they didn't have a bloody clue.
I agree that you probably have not met a faraang that knows how to cook Thai food, but you have not met a multi talented new age man with such a broad range of skills, such as myslf before.
    Poor bastard you are.

I noticed in the west the vegatables availiable in the market are very different from what the Thais use, ie the greens, eggplant, none of the little green berry things in the chilli paste dishes, etc. It is very difficult to fully mimic Thai cooking in the west.
