Joe, its been air dried for a nice hot afternoon, just after it was spiced. Then you see the nam cheen jao, the Isaan hot sauce that is just killer. Fried pork is not the same at all mate.
The only thing I'd change would be the sauce, probably used sweet chilli as that isaan sauce is mostly nam pla.
Piece of piss to make that dish.
The only significant problem would be carving that carrot, if only there was fruit carving thread on here
