Stopped in Las Vegas on our 2015 'desert' trip (up and over Yosemite, down the Owens Valley to Mazananar internment camp, across Death Valley). Got to LV and found ourselves upgraded to a really impressive suite with jacuzzi tub overlooking the pool, a living room with a bar and other things I can barely remember. Did one seafood Sunday brunch buffet which my wife enjoyed (never met a crustacean she didn't like). Went down to Boulder City and Hoover Dam to see the bathtub ring, and then on to the desert National Parks (Zion, Grand Canyon, Bryce, Capitol Reef and other canyons and roads).

This was my first visit to Las Vegas since 1969 when we stopped at my traveling companion's aunt house out at the (then) edge of town while driving back from Venice Beach to attend Woodstock.

My first dinner out in Las Vegas was at Mon Ami Gabi in Paris, Las Vegas. Should have taken food pics because I can’t even remember what I ate.

The next night we went to see Rich Little perform at a small venture, then had dinner at Michael’s. I had the veal piccata there. Fantastic! Still, no food pics. I’ve got to get into the habit. Some serious dining here in LV.

Tonight, dinner at Joe’s Seafood. I have not eaten at Joe’s since it was Joe’s Stone Crab in Miami way back in another life. I swear I will take a photo of the food. Unfortunately, stone crab is not in season.

To be fair, AO, you are an American! Not much of a challenge there for you.
After eating it in a Mexican in Key West, I tried making it a few years ago, but I couldn't get hold of the dried chilies (funnily enough, I was actually living in South America at the time).
As PAG says, the avocado gives the Mexican angle away.

Jo, you should do a u shaped trip starting on the south eastern seaboard go south and work your way up the south western seaboard - southern soul, Cajan, BBQ, Steak, Mexican and great sea food - done and dusted.
You forgot Cuban food.

^The owner in the link above is a sweet women (pictures towards the bottom of the page). The restaurant sits in the heart of Little Havana and the Hispanic women that come and go is a nice distraction while waiting for your order.

I reckon life in Vegas would be pretty good- with all those tourists, a foodies mecca. Some pretty good dive bars too, which I like.
