    dumplings

    I love little parcels of food. Steamed, fried or poached, the variations on the theme of dumplings seem endless and figure in many cuisines of the world. Lately I'm smitten with Chinese pork and watercress dumplings. I'd like to hear about your favourites, no matter what style, and if anyone has theories or facts as to where the first recorded dumpling might have come from. China? Japan? The Ukraine?

    Ahhh, Dumplings! When I was working in China, my boss would seek out those little no-name shops. Good stuff! Back in Mae Taeng, my Italian mountain biking friend Joe who spoke fluent Mandarin taught my wife and I how to cook them. We still do that back in the USA now. Pork, garlic, something green for the stuffing. It really doesn't matter!

    The origin must have been when someone thought wheat to do with wheat balls, many Siberian and Chinese legends, tho wheat long known in Iraq Assyria and the Levant.

    Quite the gamble for a first post, touche! Soup dumplings, cannot beat them and as A.Bourdain quite rightly said, risking maxillofacial damage is half the fun!
