    Food for the Brave

    Tamilok (Tommy Look!)
    Shipworms or woodworms found inside mangrove are dipped in vinegar and eaten raw. Despite its name, tamiloks are in fact molluscs so they taste a little like raw oysters.

    My wife loves those tiny little jumping baby shrimp.

    They put them into a bowl with lime juice and chilies, then they jump around the place like little popping popcorn.


    They might even pop around the inside of your mouth like that fizzy sherbert candy, though slightly difference tasting.

    I'm surprised that they don't use them in a bowl as a testicle massage, like those little fish that clean your feet.

    Pinikpikan
    This is similar to tinolang manok (chicken broth with vegetables). The dish derived its name from the word "pikpik," which means to beat lightly, usually with a stick. To prepare pinikpikan, a live chicken is beaten lightly with a stick under the wings and neck until these areas become dark blue-this is so that the blood of the chicken coagulates, making the meat more flavorful but keeping the chicken's bones unbroken. The chicken is then killed with one hard blow to the head and cut up. The edible parts of the chicken are boiled in water flavored with etag. Etag is prepared by salting the pork and curing it either by smoking or storing in earthen jars for several weeks. Foul-smelling, dark, and rotting with maggots, the final product is exactly not for the faint hearted.

    Exactly what I did when I first tried Tamilok. And what I did, even after the 15th try. But I'm stubborn. So, I'll be trying it again soon, until I down one down without puking!

    BTW, the dishes aren't typical flipper food. They are exotic dishes and only available in certain areas.
