Stage 2 of the LT pie survey - pies tested steak & mushroom & chicken & ham.

Despite my suggestions to use the standard reheating method of oven, I was over ruled by the missus who had sampled one before using the microwave method advocated by LT himself. That had turned out just fine.

This time, I have to say that I am sticking with the old fashioned way in future. Maybe it was the different microwave or the setting but the samples turned out different. The flavour in hers was good and the flesh, too. But the one I sampled was a bit of a disappointment in that the steak pieces were tough to chew. Rather like other brands I have tried. I am not aware of the type of steak used by LT's lady but it didnt take kindly to the zapping. I will test run it again using the honest oven method. That hopefully will bring a different result. I've found that with microwaves before. Zapping things seem to toughen the contents IMHO.

The cases too sort of collapsed and while the pastry was still tasty I think oven method is the sure fire way to present the pie in its best light.

I am now defrosting a chicken & ham one which will go into the oven at an appropriate time. I remembered to weigh this one to compare with a sample from another manufacturer. Minimal difference in the weights, around 250 gms each. The other brand is a beef & kidney one. I also weighed a similar contents LT product. It came in @ just over 300 gms.

Further to my comments about the state of the pies tasted last by the missus & myself - i checked with LT about the length of time in the microwave. the maximum advisory time should be no more than 4 minutes @ 600 level, not 6 minutes @ 600 level as the lady did. I will retest on the steak & kidney next up & report in.

In the meantime, I have just scoffed the chicken & ham served up the normal old fashioned way -no nukes! Thawed on a plate for several hours & than slipped into an oven @ 200 degrees for about 12 minutes. As ovens differ, mine is a little bench top ripper Electrolux, keep your meat pies on it (sorry!) & when it looks tasty golden brown & beckoning you, take it out & do the business. I always remove the foil dish it comes in before I heat it.

I think Luigi took photos of each one tested & it looked just like that. Golden brown on the top & yellow on sides & bottom. Nothing sagged (insert your own metaphor here if you will). The missus was stretching to claim a bit but I fobbed her off with part of the crust, flaky/crunchy on top & moist on the downside. The filling steamed quietly in the case. It was in a creamy mushroomy soup type gravy with flecks of herbs. Picking up a fork I quietly scoffed the contents. The ham complemented the moist pieces of chicken to a tee. Her indoors loooked on wistfully as I scoffed the lot.

Never had a chicken & ham pie from any place before this encounter. Conclusion?

    Gimme more of this!

Thanks mate for your honest comments.

I think the first pie you tried was in Frasers Bar and they are well versed in preparing them.

I know your missus said she will put a pie in the micro-wave for six minutes and that is a disaster. The meat will be tough and the pie will be shit.

Anyway the way you are preparing the pies is correct.

Allow them to thaw and then into the oven will always get the best results. You may also firstly prepare them on a micro-wave thaw for around 30 seconds setting then into an oven.

    Thanks again for your input.

Poor bugger would have been making pastry all day if he was saying the truth.

I digress but must say that after the end of World War II my father was offered the opportunity of becoming a partner in a bakery. He turned this down as he was in a so-called "good job".

The firm is now a household name and can be seen being advertised at many UK football grounds. The family no longer own the business as they sold it for £ 250 million a few years ago.

Close, was Stan Thomas bakery, then they sold it to Avana. Eventually started a new company as Peter's Savoury Products. He was my table prefect at Cyfarthfa and currently owns Cardiff Blues RFC.

Father Stan died a few months. He had been explicitly banned from opening a similar business but, of course, his son was not similarly constrained hence the name "Peter's Savoury Products". Nothing to do with Stan.

Peter Pan's was a restaurant and my granny would take me there for a raspberry and ice every Tuesday.

    The Ron Wayne of Bakeryland.

One of the three founders of Apple, sold his shares for $800 in 1976. They would now be worth $35 Billion.

Yes, of course they do, just look at the advertising boards. Perhaps not at Old Trafford who are sponsored by huge firms but certainly the lower ranked Premier League tams and the Championship ones.
