    Of egg eating technology

    Of egg eating technology:
    When I was a kid in the UK you ate a boiled egg by smacking it on the head with a teaspoon and then spent minutes picking off the shell bits.
    I moved to Canada at about 21yo and the first boiled egg thing I learned was to push a knife through the top half and flip it off..Easy peasy?
    Secondly I learned that rather than pissing around basting a fried egg with available fat just use a spatula and flip it over..How hard is that?
    My dear wife makes excellent 'open' omelets…beaten eggs in wok add ingredients and cover..No need to piss about folding!

    Boiled egg and soldiers. Makes a nice alternative to fish soup for breakfast. I imported egg cups from UK last trip home.
    In the interim I used some heavy duty shot glasses.

    Brings back memories when I was a nipper, boiled eggs (runny of course) with "soldiers" More soldiers mum!

    Try putting large eggs from the fridge into a pot with cold water straight from the tap. Wait till the water boils and after exactly 2 minutes, pull them out and drop them into a bowl of tap temp cold water for about 2 minutes so they stop cooking, then they should be just like in the photo.

    That works for me, but variables like stove temp, pot size, amount of water, and egg size will mean you'll need to experiment just once so you know if you need to increase or decrease your cooking time.

    Nah, it works fine for me. But, that's using an electric stove that takes longer to get the water up to the boil than a gas stove on full-roar would. The first time I used the stove for doing this I put 4 eggs in and pulled them out one at a time every 15 seconds from 1:45 to 2:30. The one cooked for 2:00 was perfect for soldier duty . I also learned that 2:30 was the right time to pull them out for boiled eggs that will go in the fridge for snacks/salad.

    I use Tequila shot glasses. Just the right size.

    I bought what were alleged egg poachers from Central in Patts. "Easy poaching" they said, with no mess. Just take the top off, crack and tip the egg into the bottom section and replace the close fitting top. Put in microwave for 1 minute as per instructions, on high. Presto!
    I am notified of the thing being cooked by an explosion with the top whizzing around the micro's innards. Tried shorter time, lower heat etc. Nothing gives a consistently cooked poached eggy. Bottom can be runny or the egg a solid stone. Beats me. But then again, I once bought a De Longhi toaster. Fool, Italians can't do toast. Still haven't lived that down with the family. Nice piece of Italian design though.

    ^ teaspoon of water in each and puncture the yolks with a fork then 70-90 secs

    Yeah, Shot Glasses work well for egg cups. My Thai GF is an excellent cook. She whips up omelets super fast. She worked as a cook in various institutions and waitressed in several restaurants; but usually ended up in the kitchen, as she could cook faster and better than the regular cooks. As an omelet aficionado; I have my own special omelet pans at my Cdn House & Ski Club Lodge. Thai GF doesn't like my omelet pan. I've never been able to find a consistently good cheeses in Ban Dung or even Udon, though Robinsons has some decent cheeses. I load up when we go to Pattaya for beach time.
