    BBQing in Thailand

How many of you BBQ out in the yard using a Western style Gas BBQ pit? Just curious?

I am a big BBQ guy. Love to be out flipping something on the grill sipping a beverage. My wife loves my dishes, I do the Veggies, corn, You name it. I can BBQ almost anything.

Sorry to hear you aren't home much.

I have a very large SST gas grill I am bringing over when I move. My wife cooks up her squid and big shrimp. Loves to do the big fish. I do pork loin chops with Veggies. She loves my lemon pepper chicken wings. She does up a huge load of Satay. She loves the grill more than I do I think. I know we have to fight over who is cooking.

Nothing better than sitting out by the grill in the shade, table near by. Friends and family over. Good times

I could not think of a better way to spend a afternoon. Some thick rib eyes on the grill, corn on the cob grilled in their husks and then slathered with butter. Ice cold beer.

Followed by a nice snooze on the hammock.

When my wife first came over here, I explained our past time with BBQing. She was a bit confused. It was funny as she didn't understand it until I had a BBQ party for my youngest returning back after first year of college to visit. We had about 20 people over, Ice cold beer and margaritas on tap. This was like 4 months after we moved back here. We did BBQ Baby back ribs for which she made this delish sauce for, we had some big Tiger Prawns, Shish Kabob's, Veggies. Now fast forward 3 years and she loves it and she doesn't need to spend hours trimming off the black edges on food worrying that it causes cancer because we do not BBQ with coal bricks. . She insists that the grill be taken back when we move.

If any of you guys get time, toss up some pics of your grills, I will post one tonight.

    Hey I'm hungry now......

    Charcoal all the way.

I've got 3 barbies, the 1st one is Aussie style brick barbie with a 10mm steel plate, just throw some wood under it and bobs your Aunty, bit of maintenance involved though, I usually have to run the angle grinder over it with a wire brush attachment to get rid of all the crud before using it, never had a Loytoy accident yet with the grinder , so it's all good , the other ones gas and came from a mate of mine who threw it in his sea container when he re located to Lao from Aussie, Coleman brand . the third one is 100%Lao style, just a little clay pot , throw in the charcoal and of you go, that one gets the most use, the wife still can't get her head around the farang style bbq

I have some friends that swear by charcoal. About 10 years back a few of my buddies and I did a comparison. I did 2 NY Steaks with my Gas grill and he did 2 with the Charcoal. We got a few people to blind taste them and more people like the gas grill NY steaks Vs the Charcoal.

With that said though, one thing I have found is many do not really know how to BBQ well. There really is an art to it. I have watched far too many people incinerate a nice hunk of meat on both Gas and Charcoal. There is a searing process, a lower temp cook process and a final cook. A seasoned gas grill is simply way better, consistent and you can cook indirect for Veggies etc.

^ Nah takes the fun from it all....besides, having slaved over the charcoal making we have to put it to good use.

I like to alternate fatty meat, such as duck, with steaks to keep the heat going and put the spuds in foil to bake in the charcoal. We also have small bbqs with pots of soup on. The gas is for emergencies or when it rains....

But then, I got a very simple smoker, which is fun and gives great results, specially with the cat fish and buffalo.

That doesn't surprise me at all. With the ability to control the temperature just like a regular gas cooker, you are far more likely to be able to cook the food just how you like it.

For me though as I said, if I want perfectly cooked food on a controlled gas heat I'd just use the indoor cooker and then go and sit outside with it when it's done.

There's something primal about eating meat from a stick that's been cooked on a charcoal BBQ. The whole process and pleasure starts right at the beginning when you start laying out the charcoal and get it burning. Which is then followed by a lengthy period of supervision and maintenance before it's ready to use. The whole "Me man, cook meet on fire" feeling is somewhat shat on when all you have to do is turn a knob and push a button.

So for practicality, speed and better cooked food the gas BBQ wins hands down. For the real BBQ experience with caveman satisfaction and the lovely smells and flavours that go with it, it's charcoal all the way.

    Look delish.

Glad to see some BBQ'ers in Thailand. The way some talk on TD they all just go and find Western restaurants and eat or complain about eating Thai food all the time. I suspect I will likely BBQ more in Thailand then here. Quick scooter ride to the market and any cut of pork, chicken or whole fish I want.

I have a little portable gas Weber Smokey Joe I brought over in my suitcase 5 years back. I fab'd up an adaptor to fit Thai LPG bottles. One time I made Baked Rigatoni using the grill. Wife and sister loved it.
