    Too much of a good thing, no matter how good, is bad for you. Fiber is no exception. Eating fiber in excessive quantities, no matter how healthy is may be for you, is forcing the body to work overtime. Eating fiber can also lead to weight gain as well as problems with the digestive system.
    the idea of food is it stays inside us long enough to be digested , eating too much fibre flushes it through too fast .
    you need a balance of soluble and insoluble fibre

    Well Blue, thanks for that, learn every day. I just notice that when I am in OZ I tend to eat less fibre and more stodge and shit less freely as it were. Then when I modify my diet to emulate my diet in Thailand.
    Much more fibre, less time on the bog, less straining to push one out.
    So my anecdotal observations are fibre is good.

    Even though I always try to eat wheat bread or something with a lot of grain in it, I am a little confused about brown rice.

    Aren't there different grades of rice here in Thailand, some being more healthy than others? I always thought the rice we eat here in different than what is available in the west except in oriental markets. Can someone explain this rice question? Also, isn't purple rice more healthy for you than white rice?

    Oh, I do not eat brown pasta. I have eaten wheat pasta in the past, but do not really like the flavor.

    Brown Rice is stupidly expensive in Issan. My GF thinks I am crazy to eat brown rice. Pang Mak Mak! LPG Mak Mak for Kooking. Too much time. Eat Issan Sticky rice, always cooked by Pa. Admittedly I do like his sticky rice, which he grows out in his paddies. He is the champion extended family Sticky Rice Farmer/Chef!

    Any diabetes epidemic can be explained by genetics and an over consumption of sugar. Take a look at how the northerners cook their food. Tons and tons of sugar. They like sweets as well and lots of sugar in their drinks and coffee.

    No real mystery as to why diabetes is prevalent.

    Similar to why westerners have so much heart disease. Take a look at the amount of salt we use and how much red meat we eat.
