I think it's fairly safe to assume any cats used in cooking are dead.
There used to be a restaurant here that specialized in cats. They kept them in cages out front. The diner would select the cat they wanted then the cook would use these long steel tong type things to get it by the neck out of the cage and cut it's throat.
