    I can post my "spaghetti gravy" recipe, but havent got a clue how to upload the pix, dont have a camera either. Made 10 liters last monday. Its even better out of the freezer.

    another amateur food thread gone wrong, more sacriledge, more food torturing

    everybody knows that if you're white and of a semi anglosaxon decent
    ya jest dunno how to cook - nothing wrong with ya'll - you jes lack the proper genetic setup

    famous food (and chefs) is chink food, dego food, frog food even thai.. but never heard of taffy food, memock food, ff food or the dog's food except for Alpo, Friskies that, I am told, are a tad better..

    The first proof of your cooking inability is:
    YOU GO OUT AND BUY THE SPAGHETTI
    you buy, depending on the depth of your burse, imported shit like
    Barilla or cheaper spanish or downunder crap or even worse yet the el cheapo Best Food doodoo brand stuff

    the other day CMN was talking of his lasagnas.. and I was wondering wotdafok he used for pasta in it ..ole shoe soles?..or some worm infested package of ole noodles ?

    i handmake my own noodles, yes my dear sirs
    ..flour (durum grain only and of course) , eggs,water, a pinch salt, a spoon of olive oil "extra vergine"!

    mix it into a uniform glob, flatten to the right thickness betwix the rollers of me pasta machine and then pass it through the cutter shaper thingy to get tagliatelle, tagliolini, spaghetti or what eva my appetite dictates at the moment..

    then lay the final product out to dry onto a wooden board.
    Store the delicacy in the fridge and consume as appetite demands.

    As for as the sauce..

    what sauce?
    a simple pommarola of fresh tomatoes and sweet basil or
    a spicy 'aglio olio e peperoncino aka as arrabbiata'?.. or a "puttanesca"? or
    the black squid sauce that makes yer teeth look like you jes emptied yer crankshaft well using yer gobhole
    the delicate "al sugo di vongole" clam shells sauce for the uninitiated..or
    the prince of sauces the galaxy famous "bolognese"?

    yes I think I saw one of those couple years back at Emporium, Fuckin' Yuppie was tryin' to get a decent trade-in credit on his 5 series BMW...
    Contadina made a pretty decent fresh pasta; available in the bay area at least. and if I wanted excellent home made fresh stuff... north beach was 5 blocks walk from work.
    But now? I'm in Fuckin' Chiangmai and i'll take what I cewn get. have to show you fellers how to make decent sauce I can see...
    Be afew days ya see. I might have to head over to CMNs place show 'im how that can opener thingie works...

    I am afraid that this day a hiccup occured.

    Plans were very well made, ingredients had been bought.

    An unfortunament was to happen that I didn't realise.
    I popped into the gay book shop to see my friend Gareth and had a little afternoon drink. By 4.30 I was too drunk to make a pot noodle let alone a chilli masterpiece.
    Just slept it off and have started to come round.
    Too late to be cooking.
    Will have to be tomorrow.
    Promise.

    BTW Frank I bought a new bike yesterday. It's big and blue.

    FF its one of those handcrank stainless steel pasta machine manual jobs.. got mine in S'pore on Orchard.. name of dept. store now escapes me..- they got a lot of attachement noodle shapper/cutters -can't remember the exact price but the basic machine with the taglatelle cutter should be max 2k/3k baht
    not more than! These machine are so sturdy they last forever.. I taught the maid how to do the dow mix and how to flatten and cut the dow.. she loves it..happier than a pig in shit..

    FF, I'm sure your wife knows pakchee as I'm sure she knows pakche roi na. These words work for just about anything that looks good but either tastes like shit or is badly made.

    I make a mean spaghetti gravy as Mrs Bettini next door in San Rafael used to call it.

    Usually do about 10 liters and freeze the remainder in packets that feed me and the kids. The longer in the freezer the better it gets.

    She may know words to critique foods but anything that has to with cooking? Dumb as a post. Wel,l she does make a tasty Yum mama but thats it. Her mom knows all the best places to buy good food in Chinagrai and no one in her family cooks. NO-FUCKING-ONE!!
