Can a shop located in some local street in Bangkok sell whatever it want, or is the vendor restricted by any licenses to what to sell?
Can a fruit vendor sell sandwiches or could a nudle soup restaurant sell toys etc.?

^ Food shops / Restaurants need licenses. (also for alcohol and tobacco if they sell those). Otherwise I dont think there is much restriction.
Is that license general for food, or specific for the type of food?
If a fruitvendor already sells fruit he can juts go ahead and sell sandwiches, coffee etc. - but a toystore could not?
It's not like there's strict laws or regulations, but there are 'street rules' and agreement as to who sells what and also prices.
I know in the north, any local shop will sell you alcohol at the forbidden times and usually have tables and chairs to sit outside, like a makeshift bar. They probably give a little kick back to the local cops.
The falang bar I drink at in Chiang Mai just serves beer in coffee mugs between 2PM and 5PM
So... if you expand your shop and take your neighbours livelihood away from him by selling what he is, he may stab you to death in anger, but everything else is ok by anyone?

I think the nudle shop might have issues if the toys are of the sexual variety.
Heh, not exactly what I had in mind...
I am thinking just in general terms, not specific ones like alcohol, cigarettes, etc. There are regulations for that in practically all countries.
It is just because I notice that the Thai vendors basically stick to what they are specialized in, I start wonder if there are any regulations forcing them to, or that if they are just happy doing the one thing they do best.
the obvious answer to your question is yes, provided that 'tea money' finds it's way to the correct recipients. it's not uncommon to find bestial sex paraphernalia on sale in silom right next to cheese & sweet pickle sandwiches or t-shirts bearing the image of che cuevara in flagrante
