It has to come from a shop that specializes in it. You can't make it to order it needs to sit simmering for hours. It's all they make in my favourite shop, huge pot every morning, when its all gone they are done for the day. Sometimes that is as early as noon if they had a good day.
^^ yes, its spicy enough just as is, I only like to add sourness to it. ..... now I'm hungry...

    ^ Yup.

But you know, the hippo's experience of local cuisine is a pack of mama noodles served by a gay westerner with spring onions on top.

ffs it's total knowledge of culture is a 12 pack of full-fat yogurt.

Next up, Khao Soi Islam, near Narawat Bridge.

    https://goo.gl/maps/NQTNr4yLtxcEYCa18

Always appears on the best of lists.

A Halal muslim restaurant with a lot of southern dishes.

The owner/main man does the Thai thing of chatting loudly about really funny things for 10 minutes instead of shutting up and writing down your order.

I suppose only a stupid person needs to write down a simple order.

My Khao Soi Gai magically turned into beef on the way to the table. Allahu akbar it's a miracle.

    Fokwits.

Watery broth, soggy noodles, chunks of chicken, the crispy noodles were soggy and indiscernible from the wet noodles after 2 minutes.

    All big negatives.

Positives were that the watery broth was actually deliciously tasty, and the chicken chunks were marinated to perfection.

    Not a proper Khao Soi.

6/10 due to the two positives.

Chickalick's Khao mun gai was all fat, skin and grizzle. Not that it seemed to put her off in the slightest.

Some take-away grub for MM later.

Will stop off for 50b samosas when passing by.

Still Khao Soi Mae Sai winningby a long shot.

You can buy Michelin stars, especially in Asia.

There are 2 OUTSTANDING Khao Soi places in Lampang. One is quite well known and people drop by it from all over. Its all they make as Marcusb noted, 2 huge pots simmering for the 10am opening then closed by 4 or so. My wife and I eat there every week or so on a trip to the city. You can get it with chicken thigh or a chicken leg

In CM I always wentto the small indoor restaurant down Talat Warorot, right at the arseend of it by the road on the right toward the Ping, Never knew the name but it was the best Khao Soy I had inCM but that may have been coz i always went there after hanging one on till 2AM with the Inter Bar owners who i used to always hang out with, not been for 14 years though.

It wouldn't be the first time they gave a Michelin star to a street vendor (if he is one). It's their new gimmick.
