Min Jiang has come up with a unique way of cooking drunken prawns – using pebbles.

These are first fried in a claypot with pieces of dried chilli till they are scorching hot. Meanwhile, on the side, some live prawns flap drowsily in a covered bowl after being tossed with a cup of hua tiao Chinese wine.

Once the pebbles are hot enough, the prawns are poured into the pot and flambed.

By the time the flames burn out, which takes just a couple of minutes, the prawns are perfectly cooked to a blushing red.

The meat is succulent and aromatic from the wine while the juices take on a fiery note from the dried chillis.

The dish ($28) is served up complete with the hot pebbles which help to keep the shrimps warm longer. Just make sure you do not put a stone in your mouth.
