Thats not the reason that they did it Nort. At least thats what the Libs say, but I do think it was just over hunting by the buffalo hide hunters as much as any reason.
They got smart and stopped beaver trapping at about the right time because they were harvested beyond their reproduction capacity also, and legal taking of beaver didn't come back in Oregon until about 1950, before that it was illegal.

So how about a roast beaver haunch or roast Tail, not bad with spuds and onions.

Didn't intend to give the idea the buffalo were killed so cattle could be introduced.

Lot of them were just shot for fun and as you say many for the hides. What surprises me is why someone didn't get the brilliant idea of raising buffalo rather than cattle far sooner than they did.
