I haven't been to Changi for at least 10 years so cannot really comment on that.
Hong Kong gets rave reviews but i never thought much of it besides the very good train service.
For sheer efficency of getting from one plane to another, i've yet to find a better Airport than Schipol.
I like the Irish Village in Dubai Airport, that's about it, expensive but usually a bit of banter from the pissheads at the bar.
That brings back memories of Moscow ! _ the airport catering was ( after Aeroflot collapsed) contracted to Air Lingus ( Air Fungus if their planes were anything to judge by ) and there was an Irish Pub in the departure lounge - have hazy memories of waiting for a delayed flight consuming pints of draft Guinness with vodka chasers !

The Westin Hotel in Soeul has (had?)an Irish bar in the basement called O'Lims!!!
Waiters and staff are ( were) dressed a leprachauns with green tights ,little tunics and pixie bonnets
