    My Italian Meal



    Today i cooked from scratch a lovely Carbonara.
    Ok, no i didn't... i bought it from Tescos for 4

    I also had some garlic bread and some german beer

    The great thing about pasta dishes, is that as long as the pasta itself is cooked well, almost everything then goes well with it.

    Here's another very simple dish that I make occasionally. Fettuccini with chicken and mushrooms in a creamy garlic and onion sauce.

    You need about 500g of Fettuccini (or whatever pasta you prefer), a few small onions roughly chopped, a few cloves of garlic sliced, a few mushrooms of whatever variety you prefer, some olive oil, cooking cream (or whipped cream, whatever you can get locally). I like to add nutmeg, for an end result not dissimilar to Chicken Alfredo, but of course you can play tunes with whatever, dried or fresh chillies for example.

    I always like to get the kit prepared in the quantities that I need, so I devote my attention to the important stuff, like making sure the wine isn't too cold nor too warm.

    The ingredients:



    Then start by pan frying the chicken fillets in a small amount of olive oil over a medium heat, for around 10 minutes or so.



    I then remove the fillets from the pan, and let them rest on a plate.

    Get the salted water boiling for the pasta, and get it in the pan over a low heat.



    Then, in a small frying pan, gently fry the chopped onions and garlic in olive oil.



    When the onion softens, and the garlic starts to turn golden, add the chopped/sliced mushrooms:



    When the mushroom also softens, add the spices of your choice (in my case, it's a teaspoon of ground nutmeg):



    Leave to simmer for a minute whilst you slice the chicken breasts into small enough pieces to eat comfortably without needing to cut further whilst in the pasta:



    Add the cream to the mushroom sauce mix, then drain the pasta. Either in a separate bowl, or the pasta saucepan, mix all of the components together, making sure the chicken pieces get a good coating of sauce and that the seasoning (salt and pepper) is ok.



    Serve, and liberally sprinkle with parmesan (or any other suitable enhancement of your preference). Goes well with Mont Clair's finest red.......



    For viewers from Stoke and Croyden, the purpose of the napkin on the tray is for delicately wiping food and wine residue from one's mouth, not as an aide memoir and reminder that one more wank before Emmerdale is required........

    Carbonara is so easy to make. That shop bought stuff, yuk. I bet you could have made a better one at home and it would have cost less than 4 quid.

    Eggs (always got), bacon (always got) cheese (always got), garlic (always got) cream (may not always got), pasta (always got).

    So if you have none of those always gots in your kitchen then you are a loser. The cream, don't know in pence but i would think under a pound for a little bottle.

    I've always got, and sometimes use Creme Fraiche instead of cream (which i haven't always got).

    Fry up the bacon and garlic, cook pasta, seperate eggs, mix egg yellows with cream, grated cheese and bacon, mix into cooked pasta. Serve Eat.

    Why do Thais eyes water at pasta garlic some nice stuff on top,in a romantic setting candlight music wine.

    My mate says if you poke the spaghetti so far up her it goes pasta her eyes it takes their mind of the lack of frog and chilli.
