the travel and cooking ones are interesting , but what about some straightforward basic cooking shows without too many fancy ingredients or kitchenware.

I do like Top Chef - but mostly because Padma Lakshmi is really easy on the eye.

Master Chef UK and Australia (incl the 'Junior' version) both are good because it proves that judges do not need to be wankers as they are in Master Chef US.

Can't stand her accent - but otherwise I do enjoy Annabel Langhein's 'Free Range Cook' - good, rustic cooking.

The early Masterchef Aust seasons were good, maybe the first 3, then it slowly stopped being about the cooking and too much of the show was devoted to the 3 bozos and whoever the celebrity guest was. They even had the Dalai Llama on, wtf he has to do with cooking I don't know.
They also, I believe upped the quality of the contestants to levels beyond the average amateur chef.

The guy is a bit creepy but his ideas and recipes are quite good and simple to follow.

There are endless numbers of cooking shows and videos on youtube. You probaby couldn't watch them all. Many good Thai cooking videos as well.

Aside.....do any of you folks remember the old BBC produced "cooking" program, Two Fat Ladies? Approx. mid to late '90s. Classic.
