    Lets make a carrot cake ( with pics )

    Ok here is a relativly easy very tasty cake to make ,, I personally think this improves with age and as soon as I can I like to put it in the fridge to moisten it down a little , that,s if it hangs around long enuf

    Right enuf of my waffle here we go , gentlemen start your ovens 175 degrees


    Here we have our ingredients > 225g of self raising flour> 1 tsp of mixed spice> 150g of soft dark brown sugar > 150g of grated carrots> 2 medium eggs> 150ml of sunflower oil > 2 tbls of milk.,........

    For the topping > 50g of butter > 1 orange grated rind only > 2 tbls of orange juice > 225g of icing sugar ...........




    First off flour + mixed spice in bowl mix thoughrally



    Next we add our grated carrots



    Mix the carrots well into the flour like this




    I know ,oh ye of little faith keep with it ,,,,,, oil in + eggs +milk blend in with a wooden spoon then put into a greased 11 by 7 inch tin like so , pop that into your hot oven set timer for 40 mins .



    Now while that baby is sunbathing for 40 mins we,ll waz the icing up ,, butter + grated peel + orange juice into microwave jug 2 mins half power in mine ,, then after that,s melted gradually stir in your icing sugar .



    Ok 40 mins on and our cake is out and on the cooling rack




    When your cake is nice and cool on with your icing ( dont keep eating it get it on the cake pls )



    Now the bit I,ve been waiting for a nice cuppa and a slice ,,,,,,

    Now that looks seriously bloody lovely. I'm a sucker for carrot cake because mostly all you get here is banana cake....nice , but give it a rest. They used to sell carrot cup cakes ( without icing ) in Big C but I think I was the only one buying so they disappeared.

    I will most definately give this a go as soon as I have some free time ( could be a month or so ) and let you know how it goes and what the guinee pig's ( Ms Bangyai ) verdict is. I'm sure it will get the thumbs up.

    I was just thinking about carrot cake today. I must have received your vibes. When I was still living in Canada I would make carrot cake and and carrot pineapple cake. I only made the cream cheese frosting for it. I'll try yours next time.

    Thanks Al allthough it,s a bit extreme to go and buy an oven ,,, mabe you could try your MIL,S camp fire ,,,,,,, rap the monkey in foil , chuck it in the fire for 3.5 hours !!!!! ,,,,,,,,, no I did,nt tell u to do that

    Well I'm from up north so I cannot help being blunt and honest ,
    so I have have to report that
    Nigel has let himself down again ;
    a splendid recipe, lovingly prepared , beautifully executed ,
    you could almost smell the rich warm aroma of the cake baking from here -
    the delicious scent getting darker, richer,more caramelised, the cinnamon notes
    ummmmm
    but then as i said Nigel is Nigel and the southern master bakers faults once again surfaced :
    Faux pas 1- a cow called Marg
    I'm afraid that however creamy yellow they make the container
    'I can't believe it's not BUTTER' - has never seen a cow

    Faux pas 2 - a right crock up
    Eager to be seen as a modern chap about town in touch with his crockery side,
    Nigel opts for a plate that looks like its one stripe short of 25 stone Newcastle united football fans shirt ......

    9 / 10 for effort anyway

    "Carrot Cake", one of my favorites. I have to say though, until I taste it, the "Eliminator's wifey's blueberry cheese cake is always a winner..... Nice baking n&j.

    yeah that's right. i throw a tea bag (pyramid) into a cup, add sugar and boiling water and then milk. deal with it.
