    Try cooked ham in the stuffing, along with walnuts and celery, sage (dry rubbed), no other herbs, onions and a touch of garlic, old bread crumbs (50% of bulk) and a cup or so of port instead of water. Add a teaspoon or so of salt and some fresh ground black pepper to taste.

    Definitely marinade the bird in brine to 'wet" it before cooking and add a little water as it bakes (covered), as previously suggested.

    For a slightly enhanced gamey flavour, crush a dozen juniper berries and microwave or heat them gently in a good nip of gin, then add to the brine marinade along with 6 bay leaves!

    This little concoction goes well with any wild game such as dear or wild pork.

    Cover the top of the bird in loads of streaky bacon, wrap the whoile thing in tin foil and baste it regularly. Easy peasy lemon squeezy.

    Hmmm so is the prevailing opinion that alcohol consumption before comencing the 'stuffing' of the turkey .... will add or detract from the finished result ?

    There are plastic bags made for cooking the bird in the oven. I've never used one. I assume once it's near done you slip it out of the bag and let it brown. Might be too risky a venture to try on guests the first time out.

    i'm a firm beleiver in alcohol consumption before during and after cooking is a necessary part of all cooking!

    A word of caution, a large bird and the necessary oil makes for a substantial hazard to the 'chef'. Splahing hot on on yourself causes nasty burns that tend to get infected.

    That's what we did for Xmas last month. Deep fried it in hot peanut oil. Tasted great. Later we made gumbo with the leftovers.
