First time cooking beef ribs. Started with these ribs that I ordered online. They arrived frozen and I left them in the fridge for 3 days to thaw out.
Gave the ribs a light coating of mayonnaise and then sprinkled them with a rub that I added a bit of chilli powder too. Tossed them on the charcoal grill. Found out that the ribs weren’t as thawed out as I thought as the probe temp showed that the centre of the ribs was at -1 degrees C. To late to worry about it at that point so crossed my fingers and closed the lid.
Got the ribs up to 70 degrees C. Sprinkled them with brown sugar and a bit of mango juice. Wrapped them in aluminium foil and put them back onto the grill. Got them up to 95 degrees and took them of the grill.
Mixed the juices from the aluminium foil with some honey and brushed in on the ribs. Waited about 15 minutes and then gave the ribs with a light coating of BBQ sauce. The bones pulled out without any effort.
Turned out great. Soft, juicy and with good flavour. If I was to do it again I would probably use a little less chilli powder in the rub.
