    Necron99's Get Stuffed! Tex-Mex Chili Cheeseburger

    You may remember my recent foray into making my own burger patties and the resultant Best Burger (Dinner), well I dragged out the leftover mince and set myself a challenge.
    Build a better burger.......

    The last one was good, but a bit pedestrian. So, let me introduce you to Necron99's Award Winning Stuffed Chili Cheeseburger in Smokey BBQ Relish.

    Pour yourself a glass of red...dammit grab a fucking beer while your at it, this will take a while. Put on Bob Marley & The Wailers "Legend" and head for the pantry.




    What you will need before you can wrap your laughing gear around one of these bad boys.


    Hamburger mix which I previously made here (Dinner)
    Some sort of burger bread (mine is again crap)
    Bacon
    Lettuce
    Tomato
    Carrot
    Cheese
    Spanish Onion
    Garlic
    Chilies
    Tabasco
    Ketchup (You can use paste, but then you need to add sugar and vinegar)
    Cumin
    Coriander Seed
    Black Pepper
    Worcestershire Sauce
    Thyme
    Rosemary
    Chili Flakes
    Bay Leaf
    Beef stock
    Necron99's Secret ingredient. (Guess!)





    Step 1 Get the Burger going.

    Put some gladwrap or baking paper on a board.
    Take some hamburger mince and make a giant pattie.
    Push a hollow into it's centre and fill it with cheese and a few shakes of Tabasco and pepper.



    Make another bad boy and lay it on top, shape the burger and seal the edges together. This ones just under a pound.



    Leave in the fridge to set.



    Step 2 The Sauce, store bought sauces are for pussies.

    Lot of people wouldn't even think about making a sauce or relish, but it's not hard, if you can do a spag bol or stew, you can do a sauce, it just needs more attention.

    Get a sharp knife and remove all the fat from some shitty CP bacon.

    Mince the remaining bacon and rough chop all the fat and rind.

    In a pan on a low heat rend the bacon fat and pour the fat into a saucepan



    Hmmm...bacon fat. I can almost feel the heart attack from here.


    Brown off your minced bacon.



    Step 3

    Finely dice your onion, garlic and chilies. Cut your finger while you do it and bleed copiously* whilst enjoying the direct injection into the wound of capsicum from the chili your were cutting.



    Lightly fry your onions and chili in the bacon fat, when the onions are clear add the garlic and fry a little longer.



    *Secret Ingredient...blood..


    Step 4

    Take your glass of red and drink two thirds of it for quality control.
    Add the rest to the pot along with;

    A 1/3 cup of Ketchup
    A half cup of beef stock
    A good dash of Worcestershire
    A good whack of Tabasco
    Cumin a good shake
    Thyme a good shake
    Pinch of rosemary
    Good crack of black pepper
    Good whack of chili flakes
    Couple of shakes of coriander
    A bay leaf


    Now that the wine is gone start on your beer if you hadn't already and use it to bring up the liquid in the pot.



    Bring it to the boil for a few minutes to get it cracking then reduce to a slow simmier.



    Stir often while it reduces.



    This smells freaking Awesome! the smokiness from the bacon is totally there.....

    Give it a taste and adjust any flavours and heat.

    Smelt Awesome, tasted even more Awesome, first hit is the smoke, and tomato, then comes bacon and two or 3 waves of the different chili tastes and heat.



    As it gets low stir constantly, you don't want to let stick to the pan and burn, it needs constant attention from this point on.

    You could stop it here and use it as a sauce or baste for bbq meat, but I want a relish so will go a bit further.



    When you can run a spoon through it and see a clear pan bottom it's done, remember it will thicken when it cools.


    Step 5

    Back t the burger, fire up the grill FLAME ON!




    Step 6

    Construction


    Bread, lettuce, burger and a massive whack of our sauce, tomato, but of carrot.







    Done.
    This is a two hand, 3 napkin burger, beware.



    Burp....

    ^ Yeah, there is not a decent burger roll for 200 kms.....

    But it was all about the meat and sauce, should have left the bread out altogether.
    But I think I can be forgiven alot for showing you a pan full of crystal clear pigfat....

    Probably tastes better than it looks if you can get your jaws opened wide enough to get a decent bite.
    Apart from the blood the other secret appears to be going for both the wine and the beer in large quantities before starting ( as evidenced by the shaky pictures )

    But apart from these minor points, it does look very toothsome .......but then I am a pig so I don't know if my opinion counts.

    Yes, baby Q. For two people, best investment ever. Wish I had one of the larger ones also.
    You can get them here at a bbq shop on one of the suk sois.

    Awwww, Necron, that looks amazing. I had my fill of great stuff like that while I was in Canada for three weeks in October. I've never made burgers your style, but they are definitely on the menu for when hubby gets back to Dubai.

    The forum consensus is that of a bunch of (mostly) drunken brain addled loons.....
    Bread tastes like bread no matter and is merely a practical aid in the eating of the burger. What it looks like is of no consequence.


    And i don't have an oven.

    A green for you, but I am just way too lazy. I have enough trouble getting the top and bottom round ground at Makro and adding salt and pepper before I make the patties! Great looking burger you have there.
