    ^It's actually impossible to fuck them up with a glass lid on the pan unless you were blind, or forgot to look every minute or two as they cooked on a slow heat. I learned that method as a teenager and have never used the oil/fat and spoon method since, where the end result is often rubbery with burnt edges all swimming in oil.

    It's amazing how many places can fuck eggs up, I give them one chance then switch to scrambled on following visits, assuming there was enough other good things on the plate to warrant a second visit

    Never one to get caught in a rut we had fresh duck eggs on toast this morning. We've run out of the black rye bread, but never mind.

    I have been dying for huevos rancheros for a while now. Have friends flying up from Lanta on Sunday morning. Just might try to whip this dish up for them. Can get all the ingredients just a matter of assembling it.

    Correct on all points David. The frozen mixed veg is from NZ (I think) and is cheap as chips here, something like 78 Baht for a 1 kg bag at Macros. Always keep a bag in the freezer for cooking things on a whim and a cup or 2 of mixed veg is needed. But we went grocery shopping earlier, and have fresh veg on hand for a roast pork tomorrow or Sunday.
