    Tea and/or Cheese

    I notice we haven't had any cheese or tea related threads on the board recently, so, "Nick", I thought to myself (actually I said it out loud, but no-one was listening, so one hand clapping and trees in the woods and all that) "Stop sitting on your arse and get out into the real word (of internet flora and fora) and post a thread that will kill two birds (chaffinch and a kestrel if I'm not too mistaken, although I probably am, being more into ononism than ornothology) with one stone....

    ....so here I am at the start of what might be one of the greatest journeys of my (or even my generations) life....a thread comprising the facts, figures, opinions and discussions relating to the touch, taste, sounds and feel of two of natures great presents to human kind.....cheese and tea

    cheese is good, especially strong cheddars and blue cheeses.

    tea is for mary queens.

    I dont drink coffee or tea - but I love cheese.

    Especially the stuff idividually wrapped in plastic

    I leave for New Zealand tomorrow - the land of the long white cloud and cheese and oysters.....yummy!

    Serving and Storage Tips

    • Unpasteurised cheese with a range of flavours should not be sliced until purchase otherwise it will start to lose its subtlety and aroma.
    • Keep the cheese in conditions in which it matures. Hard, semi-hard and semi-soft cheeses are stored in the temperatures from around 8 - 13 C.
    • Keep the cheese wrapped in the waxed paper and place it in a loose-fitting food-bag not to lose humidity and maintain the circulation of air.
    • Wrap blue cheeses all over as mould spores spread readily not only to other cheeses but also to everything near.
    • Chilled cheeses should be taken out of the refrigerator one and a half or two hours before serving.
    • Cheeses contain living organisms that must not be cut off from air, yet it is important not to let a cheese dry out.
    • Do not store cheese with other strong-smelling foods. As a cheese breathes it will absorb other aromas and may spoil.
    • Wrap soft cheeses loosely. Use waxed or greaseproof paper rather than cling film.
    • Let cold cheese warm up for about half an hour before eating to allow the flavour and aroma to develop.

    Cheese at its best : Switzerland Cheese and my prefered is .... hmmmm, all of them and a little ++ for Vacherin Mont d'Or and Raclette.

    Why does Swiss cheese have holes in it?

    PS. Only americans can be so stupid to regulate the hole size of the cheese. Poor guys.
