    Lets make some quick fruit scones

    Hi now you,ll have to bear with me a bit as this is the first pic thread I have attempted .

    Here goes the ingredients I use to make some easy fruit scones .

    1. 8oz Self raising flour ( I use Tesco,s blue and white not just because I squeak when I walk , its just as good at 34p a bag IMHO .
    2. 4oz Bertolli Olive spread ( no skimping here pang mak ! )

    3. 3oz of Caster sugar .
    4. 2 large eggs ( I use free range ,, for no reason other than some ol gal over the road from work leaves them outside her home ,, sometimes she is good enough to leave some money in the tin for me aswell ! )
    5. 3 ozs of sultana,s ( back in the blue and white label,s here )

    METHOD
    Preheat oven to 170 ,, Flour + fat + sugar into bowl , cut up with knife as small as poss , then rub in with fingers lightly untill fine ,, I dont mess about now just eggs + sultana,s in the bowl , stir it all up with a wooden spoon untill nicely together . Plenty of flour on the worktop now ,, spoon out your bowl , roll about lightly in the flour then pat down by hand about a little under 2 inches thick in a rectangular shape ,, cut out with your cutter and place on greaseproof paper on your oven tin . Into the preheated oven now for 15 mins , when come out place on wire rack to coll and lightly dust with caster sugar , ( now at this point there gonna be smelling very edible so try and resist untill cool ) just like me lol . enjoy !!

    Nicely rubbed in together


    Look at the colour of them little free rangers


    All nicely mixed up together , not too wet .


    All ready to shape up for the oven



    All set patiently waiting to go into the oven



    There we are all done ,, ok a little burnt but the wife insisted on showing me her new bikini that had just arrived in the post , so I was a little distracted to say the least . Actually its a wonder I did,nt have a King Alfred moment

    Anyway enjoy my first effort ,, more to follow !

    Fresh whipped cream goes a treat as well.

    Thanks LT yes a drop of the ol fresh whipped cream allways goes down a treat ,, infact last year I was privelidged to be asked to supply ( bake ) the cake for my Uncle,s 90th , which was for about 30 odd people ,, so I made a lemon sponge with the ol fresh whipped ,,,,,, they loved it ,, now let me see if I can dig a pic out ,, fingers crossed I,m new to all this

    Oh dear !!!! I am so in the deep brown stuff

    Thinking I was on a roll , I just made a victoria sponge to cook alongside the rather nice piece of pork loin in the oven I am cooking for our dinner tonight ,, now I cook that particular weight enhancing piece of deliciousness in a circular tin with a lift out base ,, the poxy mixture has run through onto the base of the oven ( the spotlessly clean oven Jan spent 3 hours on yesterday )


    Thinking later on tonight I am gonna have to be ,,, er ,,,,,,,, extrememly unselfish

    Yes Sabai thats an option , infact I recently made some with fresh strawberries from my garden + some cream I had whipped up , soooooooooooooon dissapeared

    mmm.. looks quite straightforward and I do like a scone with jam, bet they'd be bloody lovely still warm, I'll have to try this.

    I'm going to have a go tomorrow, that last hob nob recipe on here was good, the golden syrup etc baking in the oven smelt fantastic.
    Will try the scones with butter though -which i already have , that poncy olive oil based marg is expensive,and what to do with the rest of the big tub.?
    I` will follow your example and burn the bastards too, more flavoursome.

    Sorry about the non appearance of the vic sponge pic , when I got home from work lastnight the plate was empty , wifey had come home before from her work with her Filliphino friends and cleaned up . I will do a thread on making one of these later if anyone would like it.

    BTW thankyou to all of you who have greened me on this post and your encouraging comments ,, never seen that before a block of 5 + greens in a day cheers !
