    Making HP style brown sauce

    Buying HP here is not cheap, juss wondering if I could boil-up a potfull myself &
    bottle it up..? Does anyone on here do the same? Care to share your recipe
    with us..? Are the ingredients all easily available here?..inc outside BKK..?

    Here is what is in it, you have to figure out the proportions.

    What are the ingredients of HP Sauce?

    • Here are the ingredients as listed on the bottle (original variety). Of course the actual process is secret.
    • Water
    • Vinegar
    • Dates
    • Glucose-Fructose
    • Black Strap Molasses
    • Tomato Paste
    • Modified Cornstarch
    • Salt
    • Orange Juice Concentrate
    • Onion
    • Spices
    • Tamarind Extract
    • Apple Juice Concentrate
    • Garlic
    • Chili Peppers
    • Mustard Flour

    1 cup water
    1 cup white vinegar
    1/2 cup tomato paste (1 small can)
    3/4 cup dark corn syrup
    1/4 cup frozen orange juice concentrate
    1/4 cup pitted dates (chopped fine)
    3 tablespoons blackstrap molasses
    3 tablespoons apple juice
    3 tablespoons tamarind pulp
    3/4 cup apple cider vinegar
    1/2 teaspoon onion powder
    1/2 teaspoon whole cloves
    1/2 teaspoon whole black peppercorns
    1/2 teaspoon cardamom (ground)
    1/2 teaspoon garlic powder
    1/2 teaspoon mustard seeds
    1 teaspoon coarse salt
    1 inch cinnamon sticks

    1. In a large pot, add water, white vinegar, tomato paste, corn syrup, orange juice concentrate, dates, molasses, apple juice, and tamarind pulp. Stir to blend. Over medium heat and covered, bring mixture to a boil. Reduce heat to a slow simmer and simmer covered for 15 - 20 minutes.
    2. Using a spice grinder, thoroughly grind onion powder, cloves, black peppercorns, cardamom, garlic powder, mustard seed, cayenne, salt, and cinnamon.
    3. After simmering in step #1, use an immersion Blender to puree mixture and reduce lumps. Add ground spice mixture to pot, stir to blend and simmer (covered) for another 30 - 45 minutes.
    4. Add cider vinegar to pot, stir to blend and return to a simmer. When pot has reached a simmer, remove from heat and strain hot mixture through a wire strainer into a clean pot. Keep liquid, discard pulp. Rinse original pot and restrain mixture back into original pot, return to heat and simmer until thick.
    5. Ladle hot sauce mixture into hot, prepared sealable bottles and seal. Allow to cool. Keeps indefinitely in cupboard, refrigerate after opening.

    hp.sauce

    brown sauce try this recipe,30%tom ketch.10%worc.sauce,10%thick sweet soy sauce,5%white vinegar,1tea spoon cumin powder,1teaspoon cayenne or paprika,2teaspoons colemans mustard and brown suger for taste,if you want it a bit more spicy add some {roza black pepper sauce{ available in most supermarkets great with boiled bacon or brawn.

    I'd say that buy a bottle of the ready made stuff would be cheaper than buying all those ingredients.

    bet Thetsyim or taffeapples recipe its healthier though , there is no high fructose- glucose corn syrup in it , like the HP`crap.and proper vinegar too...

    just a tiny difference, but lots of small changes can make us a lot healthier.

    any type wont last long ,6 weeks ? , even in a fridge .

    It's better to make your own, if you can. Heinz bought HP a few years back and changed the recipe. The real HP sauce is a historical relic now, it's not made anymore. Nor is it British, it's owned by an American company and manufactured in Holland. Never been a big fan of the stuff, always preferred Yorkshire Relish but I think they stopped selling that in Britain about 80 years ago and that it's only made in Ireland now, but I'd be interested to know how your experiments turn out.

    If you want a good brown sauce get someone in the West Midlands to send you a bottle of "Daddies Brown Sauce "
    I am down to the last half inch and waiting for my Xmas pressie box from my ex wife and it always has 4 bottles in it !!



    They also do a Tomato Sauce which is absolutely disgusting !

    I have HP original and HP BBQ Hot woodsmoke on the go at the moment.

    There's some great stuff at MaxValue (formerly Jusco) the noo, I got some Lawry's marinades; smokehouse, garlic and ginger with lemon and a teryaki.

    the cost of making a 285grm.bottle is aprox.15baht.all the ingredeints last about 9mths.i will make a list of the items and cost,i know a 600grm.btl.heinz tom kech.is 27baht.you get 3measures.out of it.

    When ya running a restaurant, & farangs are pouring heaps of HP on their breakfasts (50% of which is still on the plate when they've left)..it gets damn costly to have HP in the condiment rack/basket..but what the customer wants....

    i used to be a breakfast chef at a 5* hotel so i now what you mean,if you get any thais in,2 will use a whole bottle between them.i did the cost of an ex.bottle of heinz steak sauce 284grms.approx 21baht.so wash out the old bottles and use them.i always make up a small amount to taste just trial and error but you will get it right.i had 2visitors a couple of weeks ago,even one commented this is nice sauce i just said it should be for what it costs.if you have time i also cure my own bacon works out approx 145baht a kilo,if you want recipe i will post.

    Oh we're not up to any star-ratings I don't think,but we're full every night. Hard to get the cooks to accept my changes in the kitchen..bought 'em a new oven..1 week later there it is all boxed-up for me to take back.."not want, to hard to clean"
    Same with the hand-held blender/mixer..gave it away to a customer in the end..they
    were not gonna use it..ho-hum eh? T.I.T. :-)

    i know what you mean,i showed some workmen we had here a spirit level,a box of wood /steel and concrete drills,diff. size paint brushes they did not use any.so i exspect they can manage with one burner one wok ect.but if they are turning out good grub leave them to it,my moto is my kitchen i am the chef so fuck off ,done a boiled ham yesterday i bet your punters would it crusty bread and your brown sauce,good luck for 2011.

    what ever you do u.s.dont buy a set of kitchen knives i brought a set of top quality ones made of sheffield steal when we came to thailand,the wifes brother came to stay one day we lit the barbi and i caught him cutting wood with the meat cleaver only cost £8o thats all he could find t.i.t.

    Do they still make steel in Sheffield.
    Thought they knocked down the old British Steel plant or Steel Peach and Tozzer to make way for a shopping mall and small industrial units.

    Branston make a good brown sauce called Branston Bite. It's not as sweet as HP and I think has a bit more of a kick.
