Hob Nobs / Oat cookie recipe
In another thread I have been asked to supply my Hob Nobs recipe, so here it is.
You can add wholemeal self-raising flour if you like and Americans can add another kilo or 2 of sugar to suit their subtle palette. Of course the besetest Hob Nobs are the choccy one, but I can never be bothered to dick around with it. If you do decide to add a choccy topping, only use Cadbury's as the rest is shite.
HOB NOBS
120gms self raising flour
120gms rolled oats
60gms soft brown sugar
120gms butter
2 Tblsp honey (or 1tblsp Golden Syrup if you can find some)
1 Tsp Bicarbonate Soda
1 or 2 Tblsp of warm water - enough to make the mix slump a bit when on the baking tray
Put all dry ingredients into a mixing bowl & mix well.
Melt honey (or syrup), butter & sugar together, add to dry ingredients & mix well. At the end add the warm water.
Roll small balls in your hand (about 2cm diameter) place on greased tray.
Push flatter with one of those pad thai implements & bake for 15 - 20 mins at 180 deg.
Remove from tray & cool on wire rack.
