    A response to Don't let me anywhere near a kitchen!

    since some less than complimentary mod changed the name of my last cooking thread i've been burning with desire to produce a new meal, but time constraints (and possibly the fact that the maid cooks great food everynight) has hindered my efforts,

    neway - 2nites the nite! look forward to a culinary delight!

    unfortunately my significant other is quite unwell today and also has a tooth ache so i needed to look after her and didnt have time to go shopping or indeed have the inclination to cook just for myself....

    so yoall gotta wait till 2moro....

    yup i is massa, and you'll notice that i is left handed too - taking the camera shot that is.....

    ok ok - here we go....

    first some ingredients



    i wanted to make a mousaka when i saw those eggplants - but alas the shop didnt have any pasta sheets - so that will have to wait for another day. but i figure they'll be good for a spagetti bol anyway

    first thing ya gotta do is slice and scour the eggplant and cover in salt - this helps reduce the bitterness of them. leave for 20 mins.



    next slice the onions, mash some garlic and chillies...



    gotta use good olive oil. splash some in a pan, lightly heat the chillies, onions and garlic.



    then lightly brown the meat, i used some premium grade beef mince...



    then u need to also do the same to the eggplant in a separate pan. splash of oil and fry till golden - then add it to the meat.



    add the tin of tomato paste, some red wine, mushrooms (i didnt have any this time ) tomatoes some bay leaves....


    the good thing about the wine is you must drink some as well - i think i added about 2/3's of a glass




    then simmer for a bit until the sauce is reduced (means the liquids evaporates off)
