    Deep-Fried Cheese Balls

The news listed some of the offerings at the Iowa State Fair: Deep-Fried Snicker Bars, Deep-Fried Oreos, Deep-Fried Twinkies, Pork Chops, Deep-Fried...then she said Deep-Fried Cheese Balls. OMG! An old fav. Found a few recipes on the Net, but? I think best to refrigerate the cheese balls before frying. Use whatever spices you like. I'll try them this week. Now I got calamari and deep-fried zucchini sticks on the brain.
    • 12 ounces extra sharp Cheddar cheese, shredded
    • 3 egg whites, stiffly beaten
    • 1/3 cup flour
    • 2 to 4 dashes hot sauce
    • Dash salt
    • 1 teaspoon parsley flakes
    • 1/4 teaspoon paprika
    • cornmeal
    • vegetable oil for frying
    Preparation:

Beat egg whites very stiff. Add shredded cheese to egg whites, then add flour, hot sauce, salt, parsley flakes, and paprika. Shape mixture into small balls and roll in cornmeal. Put oil in a heavy skillet to a depth of about 1/4-inch. Heat over medium-high heat. Place cheese balls in hot oil; cook until golden brown, turning constantly.

Alternatively, you could just shoot yourself through the heart and save all of that cooking time.

bwahahaha I had an Aussie doc (a cardio specialist at home) in HK. At a checkup, he asked about my diet and fav foods. "Peanut butter, butter, cheese, any dairy stuff, mac'n'cheese, steak..." He took a cholesterol test and was SOOO POed that my cholesterol didn't even register. Must be the wine. I do eat lots of fresh veggies tho. Spinach salad almost daily. I just follow my cravings. Yesterday, I just had to have fresh cold Roma tomatoes. So, I ate three sprinkled with salt. I don't like sugary stuff as a rule. Drink lots of genmaicha (a green tea derivative) every day. That must be the answer! I still weigh about 100lbs.

So, cheese balls. Yummy. Now I'm thinking of Baked Alaska. A gal needs ice cream at least once a year.

Cook it up! If I could find some baby squid I'd cook up a batch. I must find a new clean-up technique for pots and stove after deep-frying.
