    Queen Cakes by Props

    As I have now been forced to retire due to illness, time to do a bit of cooking, which I enjoy doing and xperimenting with.

    One thing that I have never tried to do is make cakes. My gran was a real dab hand at this so I thought I would have a try. If this turns out successful then will try some more complex cakes.

    So my first is Queen cakes, simple to make and not a long cooking time.

    The ingredients:-

    100g (4 oz) - Butter or Marge
    100g " - Sugar (preferably caster)
    2 eggs beaten
    100g (4oz) -Self raing flour
    50g (2 oz) - Sultanas

    Cream the butter and sugar together until fluffy and then beat in your eggs a little at a time





    Fold in the flour using a metal spoon and finally any fruit





    Well grease a patty tray (or use cases) and apply mixture evenly





    Bake in a pre heated oven at 190C or Mark 5 for 15 -20 minutes. The finished article,

    The verdict:-

    For my first attempt of cakes was fairly pleased. Taste was fine, but maybe could have given them a few more minutes in the oven. They aint going to last very long!!!!

    If you're feeling lazy you can buy a ready mixed Muffin packet from any big shopping mall. I tried a packet the other week and the results were very good. The only thing that surprised me in the preperation was that instead of butter the recipe calls for a mug of cooking oil ! Had my doubts about that but went ahead and the finished cakes didn't seem any greasier for it.

    They lasted just over the day, need to put on weight as during the first part of my illness lost over 2 stone.

    Had me last fag now over 5 months ago
