Made this for a snack for us last night. Not bad, but...
onion sliced into 1/4" rings -- punch out the rings per slice
milk or cream
Mix together in a bag:
3/4 flour
1/4 corn starch
cayenne/paprika/chili powder
sugar
S&P
panko bread crumbs
canola oil
Soak the onions in milk with a bit of salt for about 1/2 hour. Turn occasionally.
Dredge in the flour mix, redip in the milk, dredge in the panko crumbs. Deep fry. A few minutes per side.
Not bad. A wet batter might be better before the panko.

If like me you're a lazy git nd can't be arsed, here's the bogon way.
Cut onions Jet's way.
Whack up a 10 baht tempura mix from all good stores.
Throw onions into tempura mix.
Cook in bloody hot oil until crispy and brown.
Big plate of rings for 20 baht.
Get 'em while they're hot.

here we can buy the Gogi mix, very nice tempura powder, as they are better with a batter than breading. Making me hungry though.
I did notice that the panko crumbs didn't stick on uniformly, but the rings were still crunchy.
My new used cooking oil disposal are my used coffee filters.
