    Hillbilly's leftovers...

    If your fridge is like mine it probably has a little bit of this and a little bit of that in it. I try not to throw away alot of leftover food so...occasionally, much to the wife's dismay I like to take everything and throw it together and see what happens.

    First i grabbed some tators.


    Cut up an onion.

    Boil the tators and onions together.


    Grab a leftover chicken.

    I also threw in some ham and chopped both of these meats up.


    Get the corn off of the cob.

    I also found some green peas to throw in the mixture.


    Mash the potatoes up. Throw in some salt and pepper.

    Spread the mash into a cooking pan.


    Spread the chicken and ham out.


    Add the veggies.

    Add some cheese. You can see I am about out of sliced cheese.


    Bake for about 30 minutes or until the cheese turns golden brown.


    There you go! A nice easy way to clean out the leftovers.

    Yes, that is my new toy! It is amazing how things change as one grows older. And you can see from my leftover dinner, that I made just enough for me to eat!

    Errrm......hillbilly....those peas look decidedly grey to me. How old were they?

    Looks good enough to eat!

    Back around the mid 70's I found a way to use leftovers, just about the same way you do. Except, we used the old stuff first and then added to it.

    We took all leftovers from each meal and put them into the freezer bowl. Left over corn, peas, beans, potatos, meatloat, etc. At the end of the week they were heated up and maybe a little water added. Then we tasted and add more items as necessary. Every week we had a big pot of soup that was always different and taste great.

    Have you guys ever got caught with you hands in the cookie jar?

    The truth is when I put the green peas into the mixture, I noticed a strange smell. Perhaps, it was the bacon grease, the mushrooms or it could have been the fact that the green peas had been in the fridge for about (well let's say I was drunk.) *swallow*...

    The fact of the matter is after cooking my creation, I dumped the entire lot into the trash.

    Damn, you Sir Burr, I could have faked the rest of them out.

    p.s. Please don't tell my wife. I told her it was the new oven's fault.

    Regardless, leftovers aint bad...

    Have you tried baking "cornbread" in your new oven?

    Do you have a recipe for "cornbread" or "hush puppies" or both?

    If you don't mind saying, you are a hillbilly from what state?

    That dish is called Sheppard's Pie, with cheese, it's a classic dish for leftovers>>>bon appetite!!!! Having it in West Virginia, or other rural area's, it could have some possum, or squirel, instead of ham and chicken.

    Shepherd's Pie is made with lamb, Cottage Pie with beef and Redneck Pie with possum.
