    Homemade Rice Pudding

    When was the last time you had home made rice pudding? done in the oven, I go to my local bar tonight ok they do all the Sunday roast dinners but I saw on the menu Rice Pudding I asked the woman you make in the oven she said yes and with nutmeg on the top and all burnt around the edges, give me some!
    It was bloody lovely sorry I didnt have my camera would have been a picture.

    I used to love the M&S ones, thick cornish clotted cream kinda version...

    Now, we're off to Tops, so I hope they have a Waitrose RicePudding. Please, please, please.

    Or the ones me mom used to make, fantastic.

    I'm gonna buy an oven, then I can make rice puddings, Xmas turkey, roast pots, that's what I need!

    she gave a a rite big bowl of it, I had to go home couldn't drink any more beer

    Got some Waitrose after dinner mints (eating one now, very nice too), Waitrose Rasberry Jam, and thought about the Waitrose Muesili, but at 550 baht decided to give it a miss. TimTams too, nice. Tea; my Yorkshire (sent from ebay) is running low, so I usually go for the red packets of Twinnings English Breakfast - Tops have their own English Breakfast at a far cheaper price; got a box of 50 for around 69 baht, I think; tastes good too - an equal to the Twinnings and 20% of the price...

    Damn, I'm yearning for a traditional rice pudding. Are you in Bangkok CrazyDog? You won't be able to eat the big rice pudding all by yourself.

Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
    It's not how my mum did it, and I'm not convinced...

    Arroz con Leche

    Ingredients

    • 2 1/4 cups water
    • 1 1/2 cups short grain rice
    • 1 (1/4 inch x 3 inch) strip lime peel
    • 1/2 cup water
    • 1 cinnamon stick
    • 2 tablespoons anise seed, crushed
    • 1 (12 ounce) can evaporated milk
    • 1 (14 ounce) can condensed milk
    • 1 tablespoon vanilla extract
    • 1/4 teaspoon salt
    • 3/4 cup raisins (optional)

    Directions

    1. Combine 2 1/4 cups of water, rice, and lime peel in a saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 20 minutes until the rice is tender.
    2. While the rice is cooking, combine 1/2 cup of water, the cinnamon stick, and anise in another saucepan over medium-high heat. Bring mixture to a low boil for 3 minutes, then remove saucepan from stove. Strain flavored water into a bowl and set aside, discarding cinnamon stick and anise pieces.
    3. After rice has simmered for 20 minutes, carefully remove the lime peel with a slotted spoon, and over low heat, gradually stir evaporated milk and condensed milk into the rice. Mix in the cinnamon and anise-flavored water, vanilla, and salt. Add raisins, if desired. Continue to stir until the mixture thickens, about 7 to 10 minutes.
    4. If the pudding is too watery after 10 minutes, turn up heat to medium-low and stir continuously. When pudding reaches desired consistency, remove from heat and pour into individual dishes, or a large bowl. Store in the refrigerator until ready to serve.
    A bit of a poofs rice pudding, IMO...

    Ingredients

    • 1/2 cup uncooked long grain rice
    • 1/3 cup sugar
    • 1/2 teaspoon salt
    • 1/2 cup raisins
    • 1 teaspoon vanilla extract
    • Ground cinnamon

    Directions

    1. In a saucepan, combine milk, rice, sugar and salt if desired; bring to a boil over medium heat, stirring constantly. Pour into a greased 1-1/2-qt. baking dish. Cover and bake at 325 degrees F for 45 minutes, stirring every 15 minutes. Add raisins and vanilla; cover and bake for 15 minutes. Sprinkle with cinnamon if desired. Serve warm or chilled. Store in the refrigerator.
    That's better - excluding the final sentence; gotta be hot!

    Yup, my mum too. We always seem to have rice left over, so every now and then I make some, but the missus is not so keen on it.

    Yeah, equally as good. The pub in soi convent does BnB pudding, it's pretty good.
