    A diet supplement for skinny folks

    Bored this AM so decided to do some cooking. Yep nice sugary sweet Blueberry muffins.



    Muffins are a relatively new phenomenon, they were only doable with the advent of chemical leavening - Baking Powder. This recipe is for frozen berries.

    1 1/2 cups of AP flour
    3/4 cup of sugar
    2 teaspoons of Baking Powder
    1/3 cup of veg. oil
    1 egg
    Milk to make combined egg and oil to a cup
    1 healthy cup of frozen berries.

    crumble recipe below.


    Mix the dry ingredients together and reserve a little more than a tablespoon of it.

    Add the liquid ingredients and stir for a slow count of 10. Don't worry about getting all the lumps and bumps out, they will cook out.

    After knocking any ice crystals etc off your frozen berries toss them with the remaining tablespoon + of the dry mix. Then fold the berries into the batter, stir about three times just to get them mixed in. Using frozen berries keeps them intact while your working them into the dough.

    Set aside your batter, this will allow the berries to come to room temp. The reason for the tossing of the berries with a little of the dry mix is to give them something to cling to when introduced to the batter. That way they just don't sink to the bottom before the dough starts cooking.

    take a couple tablespoons of the AP flour and add 1/2 tablespoon or about 1.5 teaspoons of cinnamon and 2 tablespoons of sugar. Add to it 2 tablespoons of cold cubed butter and mix with your fingertips (no palms as they are hot) or a fork until you get a nice crumble.

    You can adjust the crumble to suit your own tastes.

    Portion your dough out into reasonably equal parts in your well greased muffin tin.

    Sprinkle or drop the crumble on top of your raw dough cups.

    Bake in a 200C preheated oven for 30 minutes or until a toothpick comes out nice and dry.

    Remove pan and let cool on a rack for a few minutes. If your muffins don't flip easily just take a butter or other dull knife and break the edges around the tops.

    flip on their sides or onto a tea towel on their tops to finish cooling.

    Yep one missing from the morning's batch. Had to test to insure quality for TD members. Just wouldn't do to put crap in "The Kitchen".

    mmmm my favourite kind of muffins. Is it quite easy to find these to buy ?
