    Mushroom omeletes.

    Bloody marvellous. Eat one, and the world once again spins and wobbles and you don't fall off.

    Ingredients.

    Mushrooms. A lot.
    Eggs. 2.
    Oil. No.
    Green leaves.

    How to cook.
    Employ a shady cook who wont spoil the broth.

    To serve.
    In the pan, garnished with green leaves.

    Edale, late seventies. Intended to walk north and do the Pennine Way. Ended up watching the grass move and being fed by the local vicar. Damn fine folk.

    Seriously, trick to a great omlette is in the beating of the egg.
    I don't beat them, I put them in a sealed tupperware container and shake them.
    Then straight in the pan, no delay.
    Perfect.

    Years ago my son tried your mushroom omelette and used the wrong mushrooms and was very sick and thought he was dying.

    One thing to try with a mushroom omelette, a boiled egg, crumbled up and scattered with the mushrooms and maybe a little cheese. Sounds odd putting egg in an omelette, but it really works. Another aside is whilst it's in the pan, add a spoonful of mayonnaise.

    Not sure about the Mahon, sometimes add a splash of cream.
    It's a Russian thing, lot's of boiled eggs and mayonnaise. Usually works, though cream is always a more than adequate addition.

    While in college, 1971, we would search this one field, where a farmer had at least a 100 head of cattle. We would go out at daybreak after a rain the night before. It was not unusual to pick 5 pounds or so. Wash them in water and make a sandwich with loaf bread and mayo. One night my friend saw Jesus in the mirror and swore to quit drugging and whoring. Two days later we were parting again.

    Yep, be careful,

    drug dealer from Amsterdam (accidental friend) picked a bunch with his Thai mates.

    They ended up with black lips, foaming at the mouth, and one girl ended up in cardiac arrest, luckily in hospital.

    Their recollection was, "Wow". Doctor's view, they are lucky to be alive.
