    Chicken and mango

    I might have just invented this.

    Anyway, no photos at present cos I'm eating it.

    Maybe later.

    So, a pile of chicken breast or fillets. 1/2 kilo or so, you can do a load and keep 'em for later.

    In a bowl chuck your chicken bits, teaspoon of sugar, splash of balsamic, splash of oil, splash of fish sauce, a splash of Maggie sauce, a pinch of salt, a twist of black pepper, a bit of crushed garlic.

    Stir it all up.

    If you want, stick it in the fridge over night. Or for a few days.

    Anyway, take it out of the fridge. Bring it to room temp.

    Get big pan, splash of oil and, if you can be arsed a knob of butter.

    Cos I like spicey I chuck in a bit of chilli at this point to spice up the oil. Up to you.

    Get it hot.

    Chuck in you mix. Let it cook.

    Don't stir it too much.

    You want a nice golden brown colour.

    Nice and golden, take it of the heat and let it cool / rest for at least 30 minutes'

    Have a bit of a nibble every now and then cos its your bloody chicken and you'll do what you like.


    Mango, get some.

    Either; get wife, girl friend, partner, whatever to cut it up into nice slices.

    Then get them to cut it up into bite sizes.

    Chicken, cut into bite size bits.

    Throw mango into bowl with chicken

    Add a healthy tablespoonful of mayo.

    Add a splendid splashing of Tabasco, to taste.

    Stir it a lot.

    Eat, out of the bowl with crackers, or bread or sticky rice or nothing.

    Enjoy.

    We did this again this evening, but grated in a bit of blue cheese.

    Pork with mango and cheese has been around since the 70s and probably longer.

    Agreed.
    I do ckichen with mango and mashed potato in yorkshires.

    I have the whole of the ucking village round here when I do.
    Thais love it.

    Is this fusion food ? I love Tandoori chicken with Thai papaya salad and mango chutney.
