    Bread making machine.

    New Hobby.
    Bought a bread making machine and have made a few loaves of bread, some sour dough after a fashion of experimentation with mix and raising times, But any info about it would be appreciated since I no longer have the meat processing equipment and I needed something to do, here is my last 2 loaves of sour dough.

    Looks good! I do a fair bit of bread making by hand and have been thinking about getting one of those machines. What make/model is it?

    My dad bought one a few weeks ago, still getting the hang of it but turning out some nice bread, great smell too. Good to see you've still got fire in the belly BG

    They have one in Chiang Mai for 6000 baht, and it is a cheaper model than the one I bought, and they have both models of severin at this link and made for the juice here, gots lots of shit that won't run on US current.

    Nawty= I sold the stuff to a friend up in CM, Doc told me to quit that shit and I wouldn't do it as long as it was here, and was fucking up my heart and blood pooling in my legs, so took his advise and got it the fuck outta here.
    I still cure some meat and stuff but no sausage or smoking.
    And people still coming by looking to buy hams and bacons.

    It is fine Gerbil, Severin 3986 for $146 in the states and a cheaper model sells in CM for 6000 baht and at this place in the states is less than $100, so with freight I still saved about 40% over Thai prices for the grinder and bag vacu sealer and bread machine.
    Meat grinder I paid $70 for was 18K baht in BKK for half the watts.
    And the bread machine has 8 settings and 13 hours adjustable raise time.
    and the only thing I get dirty in the kitchen is 1 cup measure and measuring spoons, makes Sunee happy as she likes the bread and no mess to clean up.

    Geez...i would have bought it.

    I am going to be setting up a wood fired earth oven soon.

    Might be getting a cow killed, so need to do something with some meat...something different......

    Which reminds me....do you know how to make tanning solution for a cows hide ?

    Hi K. fun to fuck with alright, but I am trying mostly to get good sour dough and french/ital type bread and so far it has worked fairly well.
    I have to cut a couple of inches off that tall loaf to get it in the toaster, but good eating bread.
    I made a roast beef sammich with that bread for lunch with Argentine Angus strip loin I roasted sunday, sumbitch had about an inch of beef in it and 7 inches long so was a fair bit to eat at one setting.
    Miss having you around town and hope that everything is going well for you over there in that land of cold rain.

    That's a big advantage! There's always a hell of a mess to clean up after one of my baking sessions.

    the other loaf was 4 cups of flour and weighed 1.5 kilo.

    I am not sure, but I know it says Norwegian Salmon on the package.

    Pobly same as I bought from SFS a few years back, but it is different than we make on the west coast, and more like LOX.
    Tule is dog salmon that they feed the Huskies up north, after they get that ugly snout and teeth and turn dark and the meat turns white as the fish demineralizes in fresh water and is dead and don't know it yet.
    Gill netters catch them in the rivers and they are cheap fish.
    The norsky use good fish because they mostly farm them and do not catch wild salmon.

    If anyone is interested in the recipes I am fucking with that seems to work, I will be glad to share what I have figured out about bread machines and sour dough.

    Hi BG glad to see you back, will miss your smoking postings, last year brought a bread-maker out from UK with book of recipe's for different types of bread, made a loaf with Thai flour turned out like lead so fed the fish in the klong, will bring out strong flour next time, what flour do you use in your machine, and do you use the rapid actiom yeast?

    So There is one shop in town that sells quite a bit of baking supplies, she sells White Swan Flour in 3 or 4 different uses, and I but the Bread Flour and she has Famipan instant yeast, which is fast, and the book with my machine says to use bread machine yeast or quick acting, but thats the only yeast I can find, so I use it.
    But I did not want to use yeast at all, but with the NEW potatoes that they have here you can not seem to get a sour dough starter that will work, so I did start my starter with yeast.
    But I also like a heavier bread is the reason I like sour dough, I do not like a bread that when you bite into it it smashed down to the thickness of a news paper and sticks to the roof of your mouth and your fingers poke thru the bread into the roast beef in your sandwich.
    I am not a real baker as I have only made a few biscuits in my life and this is a fisrt go at baking my own bread, always had a female for that as well as some other uses.
    But I am happy with what is coming from the machine, and still in the early experimental stages of it tho.
    But as far as rapid acting yeast goes, I do not think that any sour dough will rise in the time of the regular menu settings on the bread recipes in the book so I use the #7 menu for mixing and kneading and then set #8 menu for anything up to 13 hours rise time before baking sour dough.
    Seems to be OK as I like what I get, which doesn't mean that some would care for it, but my wife also likes it and eats bread with meals now and she will not eat the BALLOON bread bought in the stores.

    I do not know anything about Tanning hides, we always saved our deer, Elk, And moose hides and traded them to the Indians, who would make you a pair of deer or Elk gloves in trade for the hide.
    Most pelts that were from trapping were just stretched and dryed and shipped to fur buyers as raw pelts.
    One Kit Beaver I had the Indians tan it with the hair on and had a hat made from it, nice warm comfortable hat it was too.
    I looked at my machine specs and it is a 750 or 1300 Gram loaf capacity.
    And tonite I am going to set another loaf of sour dough to bake early morning with maybe 11 hours raise time, and if it turns out OK, I will post the recipe.

    The kit in that link costs more than a new hide here.....but not a great hide mind you.

    been researching the brain method....and tannins from bark, but different trees to whats native here.
